The Executive Chef of The Lodge plays a key role in providing an unparalleled dining experience for both our members and guests. The Executive Chef will design and build a menu that is in constant reflection of our brand and mission. The Executive Chef will oversee daily service, grow and inspire their back of house team, and demonstrate extreme ownership over all culinary positions and responsibilities. Essential Job Duties :
- Kitchen Management :
- Management of kitchen operations, including inventory control, ordering, and scheduling.
- Ensure the kitchen is clean, presentable, organized, and compliant with health and safety regulations.
- Oversee kitchen staff, providing guidance, training, and performance feedback.
- Menu Development :
- Design and execute an often-rotating menu that upholds our brand position
- Develop new recipes and researched techniques, incorporating seasonal and locally sourced ingredients
- Write and distribute printed recipes and plans for execution
- Food Preparation :
- Supervise and participate in the preparation and presentation of all dishes, ensuring consistency and excellence.
- Maintain high standards of taste, quality, and appearance of all menu items.
- Monitor portion sizes and waste to ensure cost control and consistency.
- Quality Control :
- Conduct regular quality checks of ingredients, dishes, and kitchen equipment.
- Address and resolve any issues related to food quality or kitchen operations promptly.
- Team Leadership :
- Lead by example, fostering a positive and professional kitchen environment.
- Train and mentor junior kitchen staff, promoting skill development and teamwork.
- Assist in staff scheduling, ensuring adequate coverage for all shifts.
