True Bakery has officially moved into Grant Street Grocery & Market, combining two of Casper’s most beloved local businesses. As a 100% sourdough bakery, we are committed to traditional, long-fermentation methods—we do not use commercially-produced yeast in any of our products. Our breads and pastries are crafted by hand, with care and attention to detail, offering our customers an unparalleled product made fresh daily.
We are now baking ALL of the fresh bread for the retail floor and for our scratch-made sandwiches at Grant Street Grocery. From classic plain sourdough boules to sourdough ciabatta, and our flavorful sourdough rye & caraway loaves, we take pride in offering a diverse range of naturally leavened breads.
What You'll Do:
- Lead Daily Production: Oversee and execute the daily production of all sourdough breads, pastries, and laminated doughs for retail and deli service.
- Bread Varieties: Mix, ferment, shape, and bake a variety of breads including plain sourdough, ciabatta, rye & caraway, and seasonal specialty loaves.
- Natural Fermentation: Maintain and nurture our sourdough starters, ensuring proper fermentation without any commercial yeast.
- Collaborate with Deli & Retail Teams: Coordinate with the sandwich line to ensure bread availability for daily lunch service, and stock the retail shelves with fresh product.
- Quality & Consistency: Ensure each batch meets our high-quality standards for flavor, texture, and appearance—no shortcuts.
- Mentorship & Training: Train and mentor junior bakers and kitchen staff on sourdough techniques and baking fundamentals.
- Scheduling & Workflow: Manage the daily baking schedule to ensure timely production and smooth operations.
- Inventory & Prep: Monitor ingredient inventory, assist with ordering, and ensure all prep work is completed efficiently.
- Clean & Safe Environment: Maintain a clean, organized, and food-safe work area at all times, following strict sanitation protocols.
What We're Looking For:
- 2 years of professional baking experience, preferably in sourdough and laminated doughs.
- Strong understanding of traditional sourdough fermentation processes and natural leavening.
- Experience baking a variety of breads, from boules to ciabatta and rye.
- Ability to lift 50 lbs and work early morning shifts.
- Strong leadership, organizational skills, and a passion for teamwork.
- A commitment to quality, craft, and community.
- Familiarity with bakery equipment and safety procedures.
