Sous Chef
Summary : The Sous Chef supports the Executive Chef in the daily operations of the kitchen, ensuring high standards of food quality and presentation. As the second-in-command, the Sous Chef plays a vital role in managing kitchen staff, preparing meals, maintaining kitchen inventory, ensuring safety and hygiene standards, and overseeing food preparation in the absence of the Executive Chef.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
- Assists the Executive Chef in planning and directing the daily operations of the kitchen.
- Supervises, train, and motivates kitchen staff to ensure consistency and quality in food preparation.
- Prepares schedules, coaches and assists in evaluating the kitchen staff’s performance.
- Contribute to menu planning, recipe development, and the implementation of new dishes.
- Directs and instructs the culinary team in food preparation, portioning, and garnishing to ensure dishes meet established standards.
- Train kitchen staff on proper sanitation practices and enforce cleaning schedules, stock rotation, and temperature controls for refrigeration.
- Monitors food inventory, orders supplies, and manages stock levels to minimize waste while maintaining freshness.
- Collaborates with the front-of-house team to ensure smooth and efficient service delivery.
- Prepares reports, costs menus and assists with other administrative tasks assigned by the Executive Chef.
- Expedites food orders to ensure timely delivery to guests.
- Assumes full responsibility of the kitchen operations in the absence of the Executive Chef.
- Monitors and control food costs, portion sizes, and kitchen budgets in coordination with the Executive Chef.
- Inspects kitchen to ensure adherence to sanitation and safety standards.
- Makes recommendations for maintenance, repair and upkeep of the kitchen and equipment.
- Adheres to all Club policies and procedures.
Supervisory Responsibilities : Directly supervises cooks, stewards and dishwashers in the kitchen. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include supervising and training employees; planning, assigning, and directing work; disciplining employees; and addressing complaints and resolving problems.

Education and / or Experience : Associate's degree (A. A.) or equivalent from two-year college or technical / culinary school; or two to four years related experience and / or training; or equivalent combination of education and experience.
Language Skills : Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
Mathematical Skills : Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
Reasoning Ability : Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
Computer Skills : To perform this job successfully, an individual should have knowledge of Point of Service systems; Spreadsheet software and Word Processing software.
