Executive Sous Chef
Summary : The Executive Sous Chef plays a key role in assisting the Executive Chef with the daily operations of the kitchen, ensuring that food quality and presentation meet the highest standards. As the second-in-command, the Executive Sous Chef is responsible for overseeing kitchen staff, preparing meals, maintaining inventory, ensuring compliance with safety and hygiene regulations, and stepping in for the Executive Chef during their absence to ensure smooth kitchen operations.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
- Assumes leadership of the kitchen when the Executive Chef is absent, ensuring the team follows all established procedures and standards.
- Collaborates with the Executive Chef to manage kitchen operations, monitoring food preparation and service to ensure consistency and quality.
- Supervises, trains, and mentors culinary and kitchen staff, establishing schedules, providing coaching, and contributing to performance evaluations.
- Assists in menu planning, including the creative use of food surpluses and leftovers, while considering guest volume, seasonal trends, and the popularity of dishes.
- Estimates food consumption, oversees inventory management, and requisition kitchen supplies to maintain stock levels.
- Creates special dishes and contributes to recipe development, ensuring that new creations align with Club standards and guest preferences.
- Analyzes menus and recipes, determining food, labor, and overhead costs to ensure efficient kitchen operations.
- Establish policies for portion control to minimize food waste and manage food costs effectively.
- Oversees kitchen staff to ensure efficient, timely, and cost-effective food production. Coordinates assignments to optimize workflow.
- Monitors food preparation methods, portion sizes, and presentation to ensure food is prepared according to recipes and quality standards.
- Conducts quality checks by tasting and smelling dishes to ensure they meet the required standards before service.
- Manages the employee meal program, ensuring that meals are prepared and served in accordance with Club guidelines.
- Enforces sanitation standards in the kitchen, conducting regular inspections to ensure cleanliness and food safety compliance.
- Recommends necessary maintenance, repairs, and upgrades for kitchen equipment to maintain operational efficiency.
- Adheres to and enforces all club policies and procedures to ensure a consistent, safe, and compliant working environment.
Su pervisory Responsibilities : Manages up to four subordinate supervisors, who supervise cooks, stewards and dishwashers in the Restaurant, Banquet and Pastry Departments. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Education and / or Experience : Associate's degree (A. A.) or equivalent from two-year college or technical / culinary school; or three to five years related experience and / or training; or equivalent combination of education and experience.
Language Skills : Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations. Ability to write reports, business correspondence, and procedure manuals. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.
Mathematical Skills : Ability to work with mathematical concepts such as probability and statistical inference, and fundamentals of plane and solid geometry and trigonometry. Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.
Reasoning Ability : Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
Computer Skills : To perform this job successfully, an individual should have knowledge of Point of Service systems; Spreadsheet software and Word Processing software.
