Job Title: Chef de Cuisine
Location: Dudley’s, New York City
Compensation: $100,000–$110,000 Bonus Full Benefits
Dudley’s, a high-volume, upscale restaurant in the heart of the Lower East Side, is seeking a seasoned Chef de Cuisine to lead and manage all kitchen operations. This is a critical leadership role for someone who thrives in a fast-paced environment and has a proven track record of running efficient, organized, and high-performing kitchens.
The Role:
As Chef de Cuisine, you’ll be responsible for all day-to-day operations of a busy, high-volume kitchen. Your focus will be on consistency, execution, systems, and team management. We’re looking for a hands-on operator with a strong command of culinary logistics and back-of-house structure.
Key Responsibilities:
- Oversee all kitchen operations: scheduling, staffing, ordering, inventory, and quality control
- Ensure consistent execution of all menu items to established standards
- Maintain strict adherence to health, safety, and sanitation protocols
- Lead and develop a large BOH team, fostering accountability, efficiency, and professionalism
- Manage food and labor costs in alignment with financial targets
- Implement and refine systems and procedures to support a high-output kitchen
Requirements:
- 3–5 years of experience in a high-volume, upscale kitchen leadership role
- Strong operational and organizational skills with a focus on execution
- Excellent communication and team management abilities
- Deep understanding of kitchen systems, prep workflows, and service flow
- Ability to stand for extended periods and work in a physically demanding environment
- Must be able to lift and carry up to 50 lbs
- NYC Food Protection Certificate preferred
