What are the responsibilities and job description for the Fish Butcher position at Under-Study?
Understudy is seeking a talented and passionate Fish Butcher to join our culinary team! As the Fish Butcher, you will play a crucial role in supporting the Executive Chef in menu development, food preparation, and kitchen operations.
Under the guidance of Executive Chef Philip Tessier and Managing Partner Justin Williams, Understudy is committed to culinary excellence and providing our community with outstanding food experiences. Be a part of the butcher team behind Michelin-starred PRESS Restaurant as we open Understudy, a playful, modern patisserie and cafe showcasing both our craft and local ingredients.
Responsibilities:
- Assist the Executive Chef in developing a fish program for both Understudy and Press
- Contribute to menu/retail development, offer educational programs, and be able to interact with guests
- Be able to crossover into meat butchery as needed
- Maintain inventory and order proteins
- Ensure compliance with food safety and sanitation regulations.
Requirements:
- Previous experience as a Butcher and Culinary Kitchen background but not required
- Experience in dry aging of proteins (optional but preferred)
- Leadership abilities with the capacity to inspire and motivate kitchen teams.
- Excellent organizational and time management skills.
- Commitment to maintaining high standards of food quality and kitchen cleanliness.
