Universal Orlando Resort believes in-person collaboration is key to our success. Many of our Team Members work in a hybrid capacity, contributing from the workplace a minimum of three days per week. JOB SUMMARY: Create, manage analysis and standardize all menu items with complete nutritional data for all food/beverage items complete with generated labels to comply with the FDA guidelines. Also assists the Quality Control Chef with quality control audits in the field. Ensures quality and safety standards are followed. Provides constant monitoring of the HACCP Program through review of documentation.
MAJOR RESPONSIBILITIES:
- Analysis of all menu items identifying all nutritional data to comply with the FDA Guidelines. Ensures that recipes match labeling and nutrition information for each product in production.
- Assist Quality Control Chef with safety audits and HACCP requirements to stay in compliance with the Florida State Law for food safety.
- Identifies all allergens in recipes and menu items resort-wide.
- Performs yield tests on current or new recipes to ensure accuracy of nutrition information and food cost.
- Reports and inputs all information into the Eatec software system.
- Understands and actively participates in Environmental, Health & Safety responsibilities by following established UO policy, procedures, training and team member involvement activities.
- Performs other duties as assigned.
SCOPE: Moderately routine; general policies applied. Self-Supervising, Decision-making. Exchange of information which occasionally requires tact and/or diplomacy.
EDUCATION:
- High school degree or GED is required.
- Bachelor's degree in food/nutrition is required.
EXPERIENCE:
- 3–5 year’s previous experience with testing and writing recipes with basic nutritional knowledge;
- or equivalent combination of education and experience.
CERTIFICATIONS, LICENSES, REGISTRATIONS:
- Certified as a Registered Dietitian by the Commission on Dietetic Registration upon hire.
- National Provider Identifier (NPI)
ADDITIONAL INFORMATION: Ability to work independently and make decisions; effective decision-making and listening abilities with strong judgment skills, excellent organizational skills to function reasonably under time constraints and within established deadlines: Maintain nutrition knowledge base through continuing education to ensure application or current research information and methods to nutrition practice.
