Summary
The Kitchen Manager is the team lead for the Food Service Department. This position oversees supervision, prep sheets, ordering, budgeting, inventory, invoice processing, and all aspects of running the department. This position is responsible for preparing quality food according to recipes in a timely, efficient manner. This position is also responsible for helping the department meet goals for sales, margin, and labor.The Kitchen Manager completes these responsibilities in a manner that upholds the values and mission of Urban Greens Co-op Market.

Responsibilities and Functions

- Offer suggestions for purchases and ways to prepare products.
- Help customers place and fill special orders.
- Prepared Foods Department Operations
- Develop and maintain department standard operating procedures
- Track budget and follow proper invoicing procedures
- Oversee inventory, ordering, and overall department operations
- Supervise, train, and support staff
- Develop production lists and staff schedules
- Create and confirm menu, recipes, and maintain costs/ingredients in database
- Oversight of food preparation and safety needs including processing raw meat and vegetables, following recipe directions for standard food items, preparing hot and cold food items for hot bar and refrigerated sections
- Oversee and assemble, package, price, repackage, and stock prepared food items as needed
- Maintain kitchen, hot bar, and equipment in a clean, sanitary and orderly condition and adhering to health department standards
- Assist with receiving and stocking product for the Prepared Foods Department
- Ensure that product is stocked, rotated, fronted and faced according to established procedures
- Research, recommend, and prepare new recipes
- Pull low quality or out of date items, recording and properly disposing of them, following established procedures
- Place orders for items as assigned by Prepared Foods Team Leader/Manager
- Maintain back stock areas in a clean, orderly condition, meeting Health Department Standards
- Wear proper clothing in accordance with Co-Op dress code during shift, including hair net or hat
- Perform other tasks as assigned by the Prepared Foods Manager, other Managers and/or Team Leads
- Safety and Security
- Use equipment and materials properly, in a safe manner, that will not lead to injury of self or others
- Protect the safety of self, co-workers, and Co-Op customers
- Report any potentially harmful equipment or situations to immediate supervisor, without delay
- Report safety-related accidents and incidents immediately to a manager
- Follow all safety policies and procedures
- Follow all safe food handling guidelines as required by local, state, and federal laws
- Supervision
- Prepare preparation lists for other employees in accordance with policies and procedures
- Direct and oversee the work of other employees to ensure the following of policies, procedures, safety practices and safe food handling
- Effectively communicate with General Manager regarding completion of assigned tasks
- Provide one on one training to employees including new hires, updates to policies and practices, or other growth opportunities as needed
- Make recommendations for departmental and store improvements to meet department goals such as margin, customer service, program expansion, etc.
- Other Duties as Assigned, Including:
- Attend meetings and events as requested
- Ensure equipment repair and maintenance is communicated to appropriate personnel and adjust until equipment has been improved
- Demonstrate support for the cooperative values and principles daily
- Perform other duties and work in other departments as assigned
- Know and uphold the Employee Handbook consistently
- Any other duties, project as assigned

- Frequent exposure to cold, hot, wet, or humid conditions
- Exposure to fumes, airborne particles, hazardous materials ranging from natural to chemical (store products, cleaning products, scents from working in a public setting, airborn food particulates, etc.)
- Exposure to and handling of fresh foods including meat and seafood
- Handling objects that have been handled by the public
- May work occasionally in temperature extremes (walk-in freezer, outside warehouse, hot kitchen, etc.)
- Noise level in the store is usually moderate to loud

Qualifications
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill and/or ability required:
- 1 year of cooking experience
- 1 year of supervisory experience
- Manual dexterity with kitchen equipment
- Experience working in a commercial kitchen
- Good knife skills and food preparation practices
- Ability to comprehend complex instructions, correspondence, memos, and recipes.
- Communicate effectively and respectfully in oral or written form to staff and customers of diverse backgrounds.
- Effectively present information in one-to-one and small group situations with employees and customers
- Add and subtract two digit numbers. Perform calculations using standard US units of measurement for currency, weight, volume and distance.
- Apply common sense understanding to carry out detailed written or oral instructions. Effectively resolve problems involving a few concrete variables in standardized situations.
- Prioritize work tasks, multi-task and maintain focus.
- Use email, websites, time clocks and other work-related programs proficiently
- Ability to manage difficult or emotional customer situations with respectful communication. Respond promptly to customer requests for assistance
- Consistently report to work on time to work scheduled shifts
