Job Description:
We are seeking a talented and motivated Chef Manager to ensure high quality standards of Food at all Valleyfair Food facilities and Catering events. The ideal candidate will develop menus, recipes, and complete food preparation methods in accordance with Food management. They must show a strong knowledge in all food operations as well as being able to assist in purchasing, inventory, and administrative needs.
Responsibilities:
- Oversee all aspects of the Valleyfair culinary program, including menu selection for catering events and food preparation in a multi-unit environment.
- Ensure compliance with park and food management standards, as well as health and safety regulations.
- Train and supervise food staff, ensuring timely execution of all kitchen operations to meet park standards.
- Implement quality control standards for food locations and conduct inspections to ensure compliance.
- Review department policies and procedures to enhance service and efficiency.
- Identify, develop, and implement new menu concepts for department and catering needs.
- Ensure food cost goals are met and maintained across all locations.
- Hire, train, and develop staff to maintain high-quality food standards.
- Ensure all guest service standards and practices are met according to Valleyfair standards.
- Other duties as assigned.
Qualifications:
- Expert knowledge of current food and beverage practices related to commercial food service, with extensive familiarity in back-of-house operations and banquet execution.
- Strong attention to detail when assigning and overseeing the work of employees, coupled with excellent problem-solving skills and the ability to train, coach, and counsel staff to overcome issues.
- Effective communication skills are essential, enabling the Chef Manager to explain proper sanitation and food safety practices as defined by local and state health department laws, particularly during health inspector visits.
- Adept at troubleshooting equipment issues and mitigating damages quickly. Highly skilled in working with a variety of food and menu items, the Chef Manager ensures proper sanitation while upholding company standards and guidelines for food preparation and presentation.
- Strong ability to plan and execute events, following detailed instructions provided by the Food and Beverage Director.
- High school graduate or equivalent. Related Culinary Arts
- Valid driver’s license.
- ServSafe and ServSafe Alcohol
- 4-6 years of Culinary work, including at least 4 years working in a commercial environment.
- Extensive experience with Food and Beverage preparation and presentation, and back of house functions.
