Summary
Procures, prepares, serves, and delivers food as per the patient’s diet order. Maintains a clean kitchen in compliance with the Health Department rules. Contributes to patient care by ensuring that palatable food is served according to the diet order, in a timely manner, at the correct temperature. Purchases food and supplies and maintains a clean and sanitary kitchen.
Essential Functions
- Prepares food for meals, including, but not limited to baking, cooking, slicing, serving, cleaning, etc.
- Adheres to health code by ensuring that all food is stored in the appropriate place and at the temperature required to keep it safe from food borne pathogens.
- Checks temperature of all refrigerators and freezers containing food and logs results daily.
- Uses FIFO to rotate stock to ensure freshness.
- Labels and dates all food items to ensure food safety.
- Serves patients meals according to the menu designated to them and within the appropriate time frame.
- Informs patient of additional food items that may be available if no predetermined menu has been assigned by the Dietitian Consultant.
- Communicates nutritional and food service concerns to the Dietitian Consultant or Administrator.
- Interviews patients or patient’s caregivers for food preferences, food allergies, timing of meals and favorite foods in the absence of the Clinical Director.
- Relays information to the nursing staff/Clinical Director to be documented in the patient’s chart.
- Ensures that kitchen and entire dietary department area is cleaned daily.
- Washes and sanitizes all utensils and dishes used during food preparation after each meal.
- Washes and sanitizes all surfaces and appliances used to prepare food daily.
- Adheres to the cleaning schedule for items not used daily.
- Assumes responsibility for establishing and maintaining effective working relationships with interdisciplinary teams and interdepartmental staff.
- Attends and participates in meetings as required.
- Adheres to dietary department policies and procedures.
- Serves as an adjunct between patients and the Clinical Director to convey dietary concerns.
- Participates in training in kitchen and receives ongoing updates as necessary.
- Maintains open lines of communication with supervisor. Keeps supervisor apprised of any dietary patient concerns.
- Assumes responsibility for related duties as required or assigned.
- Ensures that VIA professional reputation is maintained and projected.
- May Perform Other Duties as Required.
- Cleans patient rooms as required per patient room cleaning procedure. Ensures all areas of facility are clean and appropriately stocked with supplies. Keeps the family room clean throughout the day. Ensures proper chemicals are used for cleaning different surfaces. Ensures protective equipment is used when working with chemicals, i.e., gloves, glasses.
Qualifications
Minimum Qualifications
- High school diploma or GED preferred.
- Minimum 1 year experience working in food services. Experience in residential facility preferred.
