Vibrissa Beer is a vibrant and rapidly growing company with two modern, spacious and beautiful facilities in historic Front Royal and Old Town Winchester, Virginia. Our nationally award-winning beer is consistently complemented by our exceptional food.
We are seeking a talented Sous Chef to join our dynamic culinary team at our Winchester location. As a Sous Chef, you will work closely with our Chef to supervise kitchen operations, maintain food quality standards, and ensure efficient workflow. This role presents an exciting opportunity for a culinary professional who is passionate about great food and thrives in a fast-paced environment.
Pay: $23-25 per hour
Responsibilities:
Assist in Menu Development: Collaborate with our Chef to create innovative menus that highlight seasonal ingredients, meet varied customer preferences, and pair well with our craft beers.
Food Preparation: Oversee and execute food preparation activities, ensuring adherence to recipes, portion sizes, and quality standards. This includes serving as an active cook and expo.
Kitchen Supervision: Oversee kitchen staff, including shift leadership, coaching, feedback, training and day-to-day production to maintain a high-quality, efficient, effective and positive work environment. Works well under pressure in a fast-paced, high-volume environment.
Quality Control: Maintain high standards of food quality, presentation, and consistency through regular inspections, tasting sessions and customer feedback.
Inventory Management: Monitor inventory levels, order supplies, and manage food costs to optimize profitability while minimizing waste.
Health and Safety Compliance: Ensure compliance with health and safety regulations, including proper food handling, sanitation, and kitchen cleanliness. Works with staff to keep a clean and safe environment.
Catering: In coordination with the chef, plan for and execute catering events. Ensure that food is beautifully presented and well-timed to the planned event.
Customer Satisfaction: Work closely with front-of-house staff to accommodate guest preferences, dietary restrictions, and special requests to enhance the overall dining experience.
Collaboration: Foster a spirit of teamwork and collaboration among kitchen staff, promoting open communication and idea sharing to continually improve operations.
Qualifications:
Culinary Experience: Minimum of 3-4 years of experience in a high-volume kitchen, preferably in a leadership role. High quality, artisan pizza experience is a plus.
Creativity: Ability to create upscale pub fare that is differentiating and profitable. Plant-based, vegan, vegetarian and gluten-free experience is a definite asset. Willingness to learn about beer styles and flavor profiles to create complementary dishes.
Leadership Skills: Excellent leadership and communication skills with the ability to motivate and inspire kitchen staff to deliver exceptional results. Confidence and a positive can-do attitude, demonstrating a level of passion and dedication to the craft and the customer experience alike that continues to shape our culture.
Attention to Detail: Meticulous attention to detail and a commitment to maintaining high standards of food quality, presentation, safety, and cleanliness.
Flexibility: Ability to work in a fast-paced environment and adapt to changing priorities and business needs. Flexibility with your schedule is required to include nights and weekends.
Culinary Training: Formal culinary training and/or a degree in culinary arts is preferred but not required. ServSafe Manager Certification is required. (Can obtain ServSafe Manger Certification upon first month of position, though current certification is highly preferred).
