The Vitaly Head Chef Operations Manager

Our current Kitchen and Operations Manager is departing for family reasons, returning to his country of origin.

We are seeking a dedicated and passionate individual to join our team as a long-term partner, committed to helping us achieve many more years of success, and play in the future a key role in our franchising development program.

Vitaly in Costa Mesa is, since 2013, owned and managed by his Italian founders and is a successful new concept of Italian Ristorante - Pinseria, completed by two Gelato and Coffee shop sections as well. We offer our products for dine-in full service to approximately 25 tables, for To Go or for delivery. We also take place at events through our catering services and private cooking sometimes.

We seek a highly energetic, motivated, problem-solving professional with a passion for culinary excellence, strong work ethics, and a commitment to a healthy lifestyle.

A minimum of 8 to 10 years of experience in professionally cooking and prepping Italian menu items and managing kitchens is an absolute must.

Culinary school degree or certification preferred

The Head Chef and Operations Manager is responsible for overseeing all culinary aspects of our restaurant, ensuring high-quality food production, menu execution, and efficient kitchen management. This role involves day-to-day kitchen operations as well as contributing to menu development and overall business growth, working directly with the Company’s CEO.

Job and candidate Description

  • The candidate must have extensive experience in preparing and cooking Italian food like Pasta, Pizza, Flat Breads, Soups, and so on
  • He/She will be responsible for Vitaly’s success and revenue growth through, among other things, the high quality of all food and other menu items prepared and served to customers aesthetically perfect "Instagram" ready
  • He/she will be responsible for the quality of all the products served to our customers
  • He/She will be helping in the continuous fine-tuning of the existing menu and developing new products
  • The candidate will ideally speak Italian and have an excellent knowledge of Italian culture and food
  • Being Vitaly a 12-year-old business with tested and successful Italian family recipes, the candidate will need to be able to learn, execute, and perfectly replicate our recipes to maintain the authenticity and quality that our customers know and expect
  • managing kitchen staff, including scheduling, performance reviews, and day-to-day task assignments
  • ordering and purchasing the majority of the daily supplies, controlling costs and quantities optimization in connection therewith
  • managing or executing the preparation of all homemade menu items (including pastas, piadinas, Pizza-Pinsa, sauces, soups, salads, desserts, and so on), and general food prepping, assisted or occasionally solo if and when needed
  • maintenance management of the company equipment and facility including the coordination of the cleaning team and the pest control suppliers;
  • hiring, training and terminating kitchen or maintenance employees if and when needed
  • actively cooperate in controlling and saving on production labor cost and cost of goods sold
  • managing all day-to-day operations of the business particularly in the production area;
  • fluent English language reading and speaking is a must, Spanish and Italian languages knowledge will be a plus
  • Food Manager course and certificate will be required
  • basic knowledge of Microsoft software’s like Excel and Word is required

Schedule and Compensation·

  • This is a Full-time exempt position, approximately 60 hours per week
  • · Salary range if full-time exempt: $70,000 to $80,000 USD per year, based on experience and hours scheduled.
