Dining Manager
Summary:
The Dining Manager is responsible for organizing and managing all FOH in unit daily operations, and executes key directives and initiatives as outlined by the Director of Culinary Operations. Daily operations include dining room operations, resident/guest/employee relations and unit special events.
Essential Duties and Responsibilities include, but are not limited to:
- Manages daily FOH food service operations to the current federal, state and local standards, guidelines and regulations governing our facilities.
- Will assist the RD in providing clinical nutrition and dietary management support services.
- Assist in developing monthly, quarterly, annual quality assurance reports, and participate in Teams meetings as required.
- Participate in weekly team calls and complete QA data.
- Manage the execution of all in unit special event functions with FOH staff, complete BEOs, communicate with Executive Chef, RD and Director of Culinary Operations on pricing and menu development as required, and ensure completion of all FOH duties as related to events.
- Manage in unit FOH employee relations - including individual performance evaluations, hiring/onboarding, CA and termination process, in conjunction with HR leadership.
- Communicate, document and report ongoing staff performance issues to the Corporate Director of FOH Culinary Operations and HR leadership.
- Manage all schedules in unit for FOH and is responsible for maintaining the unit labor budget for FOH dining staff, as set by Executive Leadership. This includes ensuring accurate time clock punches and managing OT.
- Carry out inventory management and tracking for clinical dining and FOH-related items, including perishables and smallwares, and will work with unit FOH/BOH leadership for inventory maintenance and procurement.
- Manage FOH-related vendor relationships and adhere to budget guidelines as detailed by the Director of Culinary Operations. Must also demonstrate fiscal responsibility when placing orders and understand appropriate inventory levels and forecasting.
- Must be knowledgeable of dietary practices and procedures as well as the laws, regulations, and guidelines governing dietary functions in a CCRC community.
- Other duties as assigned.
Minimum Education/Skills/Experience/Credentials:
- Maintain a CDM, CFPP (Certified Dietary Manager, Certified Food Protection Professional) certification. If one does not have a current certification, it must be actively obtained within the first year.
- Must possess and maintain a current ServSafe Food Managers License
- Clinical Dining experience & knowledge of modified diets required
- Working knowledge of internal and external catering functions including budgeting, planning, procurement, execution, and logistics
- Excellent customer service skills
- Systems and detail-oriented
- Highly skilled at multitasking and prioritizing
- Ability to handle difficult resident or employee relations with ease and de-escalate
- Computer/email/Teams proficient
- Basset certification preferred
- Valid Drivers License
Physical Requirements:
- Ability to stand and walk during 6-to-8-hour shifts.
- Ability to reach, bend, stoop, and wipe.
- Ability to lift and carry supplies and equipment up to 25 pound and place on high and low shelves in storerooms.
- Ability to frequently push carts with dishes and supplies up to 60 pounds to storerooms.
Other regulated requirements:
- Must be willing to undergo pre-employment background check, including (MVR) moving vehicle records.
- Must have or be willing to receive the Flu-Shot Vaccine, and TB testing.
- Must be willing to undergo pre-employment drug screening, including cannabis.
- Must be willing to undergo biometric screening.
