POSITION SUMMARY
Under the general supervision of the community administrator, the Fine Dining Director leads the operation of an effective, efficient and compliant Food Services Program for the residents at a retirement community. This includes the planning and delivering of nutritious and appetizing dining services, purchasing food, supplies and inventory, leading the food service staff in their services and leading the planning of special food functions, receptions and catering services.
KEY RESPONSIBILITIES
- Planning Plans, in conjunction with Administrator or Executive Director, for the food services at the community. Will coordinate and plan all menus, special functions, receptions, catering services and special food services. Maintains a current understanding of the work of Wesley Woods and the overall strategic plan, mission, vision and values of Wesley Woods. Evaluates the operational and ongoing food services of the community and residents; develops and implements the appropriate plans to meet identified needs.
- Oversees Oversees the preparation and serving of meals according to menu and recipes; overseeing food selection/procurement, collecting supplies and ingredients, preparing food items with proper cooking equipment and temperatures, overseeing proper food handling, service and storage, coordinating food presentation, garnishment and temperature tests, and style and appearance of food presentation. Oversees the cleaning of the Dining Room and all work areas and equipment according to standards.
- Manages Oversees the management of the food services staff in accordance with WWSL Human Resources policies, providing the leadership in interviewing, hiring, disciplining, training and evaluating staff performance in collaboration with Human Resources leadership. Ensures timely completion of appropriate records and documentation for human resources and payroll records.
- Schedules Schedules staff to cover all meals and events for all residents in the community; ensures staff attendance at required training sessions and provides in service training for all food service personnel in proper culinary techniques, garnishment, presentation, service, food handling, safety and sanitation standards and procedures.
- Develops Develops and oversees the food services operating and capital budgets, obtaining approval from WWSL administration, appropriate boards and governmental agencies.
- Implements Implements and monitors corporate policies and procedures relating to safety, risk management, finance, human resources, and fund raising. Assists in the development of company-wide policies and procedures, updating as needed.
- Relationships Maintains relationships and collaborates with community staff and other leaders of the organization on food service and event services for the facility. Develops and ensures a positive rapport with all staff to ensure timely and safe resolutions to all food service issues.
- Compliance Complies with all applicable state, federal and local safety and sanitation standards. Maintains safe and sanitary working conditions in accordance with all codes and standards.
- Reports Maintains and provides appropriate documentation as required. Provides reports and/or related documents and materials to senior staff as needed. Maintains service/warranty records.
- Professional Development Pursues training and development opportunities, attending educational opportunities to keeps current in developments important to the success of the program. Maintain current knowledge of OSHA and state regulations about safety, equipment and sanitation procedures. Ensures staff attendance at required administrative educational offerings as appropriate; provide other opportunities for professional growth.
- Professional Standards Demonstrates consistent and exceptional professional work behavior, consistent with Wesley Woodss policies and procedures.
- Performs - Other duties as assigned.
MINIMUM QUALIFICATIONS
- Associates Degree in Culinary Arts; Bachelors degree in Hotel/Restaurant Management preferred.
- Five years experience in Food Service, 2 years in a supervisory position.
- The ability to read, write and follow written and oral instructions in English. Experience in a retirement community preferred. Current CPR and/or First Aid will be required.
- Ability to lift up to fifty pounds; to bend, stoops and twists.
- Ability to stand and walk for long periods of time
WORKING CONDITIONS
- Normal kitchen conditions in a retirement residence.
- Working around high temperatures.
- Moderate to heavy lifting.
- May be required to wear uniforms.
