REPORTS TO: Nutrition Services Director
JOB SUMMARY
Accountable for maintaining cleanliness and sanitation standards for all food pans, sheet pans, food racks, cooking utensils, kitchenware, etc., using machine and manual cleaning methods. Ensures areas used to complete these tasks are maintained in a clean, safe, and sanitary facility.
JOB REQUIREMENTS
High school graduate or equivalent preferred.
EXPERIENCE
PREFERRED: Experience with catering, fast food service, and prep work or any food handling experience. Experience working in kitchens of facilities or institutions that provide meals to large groups of people daily.

- Able to learn to operate equipment and perform a variety of repetitive tasks.
- Ability to do heavy lifting.
- Ability to stand for long periods of time.
- Apply common sense understanding to carry out written and/or oral instructions.
- Deliver friendly and efficient customer service.
- Speak clearly and present information orally.
- Able to follow directions and complete tasks assigned.
- Able to follow time schedules for meal preparation and serving.
ESSENTIAL FUNCTIONS
- Check box bin: empty when needed.
- Set up / clear pot washing area (3-com sink area).
- Check tray-belt, clear if needed.
- Check and fill dish machine.
- Check and record wash / rinse temperatures daily.
- Wash any items that are soiled and dirty.
- All washable equipment must air dry on racks / free of water. Follow procedure of never touching dirty equipment before touching clean equipment without washing hands first.Sort and stack clean equipment. Carries / carts clean equipment to proper storage areas.
- Collect soiled dishes from soiled utility room in patient care areas
- Run dish machine filters through machine.
- Shut down machine, drain and clean dish machine jets and screens, rinse machine inside and out, using hose with hot water connection.
- Remove trash and cardboard to dumpster.
- Fill stock sheets as necessary.
- Perform other duties as assigned.
SECONDARY FUNCTIONS
- Adequately trains a “back up” employee to fill in when they are unable to work (sick or on vacation)
- Performs other food service related tasks when asked by supervisor.
- Attends department meetings and in-services as appropriate.
