Responsibilities:
The Whitsons Culinary Group is seeking a skilled professional to fill the position of Assistant Chef Manager at our Summer Camp location. This role will be responsible for assisting the General Manager in all aspects of the Food Program, ensuring compliance with USDA regulations and maintaining a safe and healthy environment for campers and staff.
Responsibilities:
- Assist in developing and implementing food safety protocols and procedures.
- Manage inventory and supplies, ensuring that all necessary items are ordered and stocked in a timely manner.
- Collaborate with the General Manager to plan and execute meal services, including menu planning, food preparation, and presentation.
- Recruit, hire, and train team members to ensure adequate staffing and expertise in the kitchen.
- Maintain accurate records and reports, including inventory, food costs, and labor hours.
- Ensure compliance with all relevant laws, regulations, and company policies, including those related to food safety, sanitation, and employee conduct.
- Bachelor's degree or equivalent in food and nutrition, food service management, dietetics, family and consumer sciences, nutrition education, culinary arts, business, or a related field.
- Or, a bachelor's degree or equivalent in any academic major, and a state-recognized certificate in food and nutrition, food service management, dietetics, family and consumer sciences, nutrition education, culinary arts, or business.
- Or, an associate's degree or equivalent in food and nutrition, food service management, dietetics, family and consumer sciences, nutrition education, culinary arts, business, or a related field, and at least one year of relevant school nutrition program experience.
- Or, a high school diploma or GED, and at least five years of experience in school nutrition programs.
