Description

Wine & Roses, operated by Appellation, is seeking a skilled Sous Chef Tournant to support daily culinary operations and provide rotational coverage across all kitchen stations. This dynamic role ensures consistency, quality, and leadership across our culinary team. This full-time position requires flexible availability, including nights, weekends, and holidays.

Job Responsibilities Include But Not Limited To

  • Rotate through kitchen stations (grill, sauté, pastry, etc.) to maintain high culinary standards.
  • Support Executive and Restaurant Chef in daily operations, service, and meal prep.
  • Supervise, train, and mentor kitchen staff on food quality, hygiene, portioning, and presentation.
  • Manage inventory, minimize waste, and ensure equipment upkeep.
  • Collaborate on new menu development and recipe improvement.
  • Step in for other Sous Chefs as needed; lead daily lineup meetings.
  • Maintain sanitation, safety, and cleanliness per Cal-OSHA and health codes.
  • Uphold company standards and lead by example in professionalism and teamwork.
  • Assist in cost control, purchasing, and maintaining kitchen documentation.
  • Fill in for line cooks and other roles when needed.
  • Ensure a positive kitchen culture through clear communication, motivation, and training.

  • Pay Range: $25.00 to $26.00 per hour depending on experience

  • 3 years professional cooking; 1 year in a Sous Chef role.
  • Strong leadership, communication, and team-building skills.
  • Thorough knowledge of cooking techniques, food safety, and kitchen operations.
  • Skilled in meat/fish butchery, cost control, and recipe consistency.
  • Ability to multitask, manage stress, and maintain attention to detail in a fast-paced environment.
  • Proficient in English (verbal/written), basic math, and computer applications.
  • Must meet physical demands: standing, bending, lifting (up to 25 lbs), working in hot/humid conditions, stair use.
