SPECIFIC DUTIES AND RESPONSIBILITIES
- Cleans according to standards the following items and areas :
- Broilers
- Deep fryers
- Grills
- Ovens
- Range hoods
- Ware washing machines
- Floors
- Walk-ins
- Carefully rinses all dishware, tableware, and service ware for restaurants after sending them through the dish machine.
- Knows and practices Health & Safety standards as set forth by governmental agencies.
- Washes hands at each possible point of contamination.
- Cleans, deck brushes, and mops all kitchen floors.
- Follows 3-compartment sink procedures.
- Weekly de-liming of each dish machine.
- Uses all chemicals according to use, and knows where sheets are located.
- Reports any malfunctions of the dishwashing machine, including temperatures (too low or too high) or any other type of equipment used.
- Sets up, breaks down, and maintains all dishwashers.
- Empties all trashes and cardboard boxes to the dumpsters.
- Cleans and maintains all cook lines.
- Any other duties as assigned by supervisors in order to maintain kitchen, including but not limited to :
- Cleaning ice machines
- Cleaning hand sinks
- Filling paper towel and soap dispenser
- Use and clean floor signs
