The Ice Cream Production Assistant is responsible for preparing, packaging, and producing ice cream following standard operating procedures (SOPs) and production schedules. This role involves operating ice cream machines, ensuring product quality and food safety, and maintaining a clean and organized facility.
Essential Duties and Responsibilities:
The essential functions include, but are not limited to, the following:
Quality Assurance:
- Follow SOPs to ensure all ice cream is made and packaged consistently.
- Report any quality concerns to the Ice Cream Production Shift Leader or Creamery Manager.
Food Safety:
- Adhere to Good Manufacturing Practices (GMPs), SOPs, Sanitation Standard Operating Procedures (SSOPs), and company Core Values.
- Report any food safety concerns to the Ice Cream Production Assistant Manager or the Shift Leader.
Production:
- Label all packaging according to SOPs.
- Set up and clean up the ice cream packaging space.
- Minimize packaging waste.
- Organize and label all products to ensure First-In, First-Out (FIFO) inventory management.
- Maintain freezer organization per SOPs.
- Operate the 24-quart and/or 44-quart ice cream machines and vat pump safely and efficiently.
- Run 24-quart and 44-quart machines simultaneously when needed.
- Mix and freeze ice cream flavors according to formulas and SOPs.
- Execute proper flavor flow per SOPs.
- Package ice cream consistently following SOPs.
- Train to run solo packaged ice cream shifts using a piston depositor or hand scooping.
- Understand tub systems (e.g., kicked-back and partial tubs).
- Properly kit out ingredients per SOPs.
- Prepare ice cream inclusions and mix (stovetop) per SOPs.
- Identify opportunities for process improvement using a continuous improvement mindset.
- Troubleshoot and resolve basic operating difficulties.
- Collect and submit designated production data accurately and on time.
- Communicate all concerns or issues to the Ice Cream Production Assistant Manager or the Shift Leader.
Production Reports:
- Collect and submit designated production data accurately and on time.
Research and Development (R&D):
- Operate the 2-quart micro-trial machines.
- Assist in testing new or improved ice cream formulas.
- Document formula measurements and processes accurately.
- Develop repeatable new formulas and processes.
- Report any concerns or issues during R&D to the Ice Cream Production Assistant Manager or Shift Leader.
Qualifications and Competencies:
- High school diploma or GED preferred but not required.
- Experience in an ice cream shop, bakery, or food production environment is preferred but not required.
- Availability to work weekdays, weekends, and holidays.
- Strong attention to detail and precision.
- Ability to focus on repetitive tasks while maintaining quality.
- Awareness of safety and cleanliness standards.
- Ability to identify and address product or equipment issues.
- Quick problem-solving skills.
- Team player with the ability to work independently.
- Ability to follow directions and procedures accurately.
