JOB SUMMARY:
Pastry Chef de Partie works closely with the Pastry Sous Chef and Head Pastry Chef to execute pastry recipes with precision and consistency, while also fostering creativity in developing new menu items. Your attention to detail, pastry expertise, and dedication to quality will ensure the success of our pastry program and uphold Zuma's reputation for excellence.
ESSENTIAL JOB FUNCTIONS:
- Prepare a variety of high-quality pastries, desserts, and baked goods in accordance with Zuma's standards
- Execute pastry recipes with precision and consistency, ensuring adherence to presentation guidelines
- Maintain a clean and organized pastry section, including proper storage of ingredients and equipment
- Collaborate with the pastry team to develop new menu items and seasonal offerings
- Monitor inventory levels and communicate any shortages or discrepancies to the Pastry Sous Chef
- Train and mentor junior pastry team members, providing guidance on techniques and procedures
- Assist in the creation of production schedules and participate in daily pre-service briefings
- Follow all food safety and sanitation protocols, including proper handling and storage of ingredients
- Follow opening and closing procedures as instructed by kitchen management
- Uphold Zuma's commitment to quality, excellence, and guest satisfaction in every aspect of food preparation
- Performs other duties and responsibilities as required or requested
JOB KNOWLEDGE, EXPERIENCE AND SKILLS:
- Previous experience as a Pastry Chef de Partie or similar role in a high-volume restaurant or hotel environment
- Solid understanding of pastry techniques, including mixing, baking, piping, and decorating
- Knowledge of pastry ingredients, flavors, and flavor combinations
- Ability to work efficiently under pressure in a fast-paced kitchen environment
- Attention to detail and commitment to maintaining high standards of food quality and presentation
- Culinary degree or relevant culinary training is a plus
- Ability to work flexible hours, including evenings, weekends, and holidays, as required
