Job Summary
We are seeking a talented and experienced Executive Sushi Chef to join our team. This unique opportunity is to lead the Sushi department across all Experience Zuzu locations.
What You’ll Be Doing (Key Responsibilities)
Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
Prepare all types of sushi, including maki, nigiri and sashimi
Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango and carrots)
Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate
Manage food prep activities, like boiling rice
Prepare exceptional meals according to standard recipes and venue specifications.
Prepare, arrange, and plate dishes per the current menu.
Adhere to culinary standards and regulations.
Function as a supportive team member during their shift.
Track, record and replenish inventory as needed and in accordance with established par levels.
Adhere to all standard operating procedures and sequence of service standards.
Maintain line of sight/atmosphere control by circulating through work area throughout shift.
Comply with all safety and health procedures as well as company and departmental policies and procedures.

Fine Dining experience required
Experience with crafting Sushi cuisine
Proven ability to work as a team, stay organized, multi-task, and prioritize
Understand various cooking methods, ingredients, equipment, and procedures
Familiar with industry best practices
ServSafe Food Handlers Certificate required
