Event Chef Responsibilities
If you are reporting to the event location, disregard and skip to “arrival/ offload”. If scheduled to arrive @ OTV you will be scheduled 1-2 hours prior to departure. Upon arrival @ OTV and using the BEO and equipment list as guides, go through them line by line and verify everything listed is included. Pull together anything that may be missing. This is also the time to finish any last-minute prep items, like frying or heating food in the oven.
Work closely with stewards to help ensure that all food and equipment necessary are loaded on the truck neatly, and well organized.
Generally, this will be performed by a steward.
Meet the truck at the event. Make contact with both the FOH manager as well as the event contact and familiarize yourself with the layout.
Working again with the stewards, help make sure all food and equipment is safely removed from the truck. Coordinate the set-up and placement of equipment. Make sure food is properly stored onsite to maintain temperature and preserve quality. As the truck in unloaded everything needs to go in its place. Make sure you have a clear vision of how things are going to flow for successful execution of the entire event.
Instruct Culinary team and make sure everyone is clear on their responsibilities.
With confidence and respect make sure everyone stays focused pulling in the same direction. Understand when key times are during the event timeline and stay one step ahead to avoid backup or confusion of the schedule.
When it’s time, everything can be packed up and loaded back onto the truck separating waste and “food to be saved”. Remember to clean as you go and keep everything organized so loading can be done efficiently. Also, remember to communicate with FOH manager so things aren’t put away too early.
Generally, this will be performed by a steward, but please check out with FOH manager before leaving the event.
