Work with General Manager on sales projection and lead the restaurant team in the attainment of sales forecast.
Manage and monitor the outlets ‘sales and expenditures, compare budget against actual, and takes appropriate actions to meet budgets.
Implement strategies and action plans to meet the sales and operations objectives as set by Management.
Provide general goals and directions to the Outlet Manager. Cultivate team spirit and encourage team building among the management and the staff.
Responsible for the profitability of the restaurants.
Develop cost control system and procedures for implementation in the restaurants so that profit margin can be achieved.
Analyse and interpret monthly profit and loss statements and take actions for improvement of results.
Prepare and submit monthly sales and P&L analysis report on a timely basis.
Ensure that all restaurants operate in compliance with Operating Level Programs Standards, local authorities’ and MOE’s regulations.
Conduct Bi-annually Operating Level Programs Standard Checklist in the restaurant and discuss areas for improvement with Restaurant Managers.
Constantly review operation procedures, methods and workflow and introduce improvement to achieve level of efficiency and service.
Assist in the set-up of new restaurant, working with various parties in restaurant layout, selection of equipment, ordering of inventory and other aspects pertaining to the set-up.
Lead and direct the Restaurant Managers to attain sales and operational objectives.
Develop, coach and train Restaurant Managers to meet performance standards. Conduct performance appraisals for Restaurant Managers and provide constructive feedback to General Manager on performance of Restaurant Managers.
Assist General Manager in selection of Managers. Make recommendations for internal promotions or transfer of Managers.
Plan and anticipate manpower requirements with the Outlet Managers to ensure sufficient outlet manning throughout the year.
Grant final approval to the weekly schedule of both managers and staff. Monitor labour cost budgets as versus sales forecasts.
Verify all voids, refunds and discounts, and ensure all cash takings of outlets are deposited promptly.
Conduct cash audit. Monitor any cash and sales transaction irregularity and take appropriate actions and institute necessary cash control measures over internal theft.
Check and approve petty cash for individual outlet.
Conduct monthly area meetings with outlet managers.
Monitor activities of competitors within proximity of the restaurant and provide feedback on market conditions and customer preferences to the General Manager and Marketing Department.
Liaise with Marketing Division to execute corporate and local level A&P activities. Ensure the smooth implementation and execution of marketing programmes and A&P promotions in outlets.
Ensure that the corporate image of Swensen’s is always maintained.
Work with Purchasing Department in the selection of equipment and tools for operation’s use, subject to the approval of General Manager.
Ensure that the standard of service is maintained at all the restaurants.
Ensure the accuracy and timely submission of all monthly documents of area outlets to Head Office.
