FUNCTION:
The VP of Food and Beverage is responsible for coordinating and directing all property food and beverage operations while maintaining a profitable F & B department, ensuring high quality products and service levels. Responsible for the leadership of F & B Managers, and Supervisors, and front and back of house F & B team members.
RESPONSIBILITIES:
- Effectively work with the F & B team and other departments to manage daily operations and special events.
- Responsible for both front and back of house operations, including banquets and convention services
- Prepare necessary data for the budget in area of responsibility; project annual costs and monitor actual financial results; take corrective action where necessary to help ensure that financial goals are met.
- Control costs of product through monitoring stock and ensuring preparation of all food and beverages within established procedures and policies. Oversee F & B inventories at all service areas.
- Maintain the appearance and cleanliness of all facilities and bar service areas at the highest level.
- Promote the highest quality of service to guests. Handle and resolve all guest complaints and concerns.
- Market ideas to promote business; reduce employee turnover; maintain revenue and payroll budgets/ and meet budgeted productivity while keeping quality consistently high.
- Possess a proven track record of motivating managers and team members to meet and exceed goals and to provide the highest quality experience for our guests.
- Strong understanding of forecasting, budgeting, scheduling, productivity, inventory controls, P & L analysis, and F & B cost controls.
- Identify opportunities to increase profits and create value by challenging existing processes, encouraging innovation and driving necessary change.
- Review feedback from guests and ensures appropriate action is taken.
- Lead the department by conceptualizing and creating attractive food and beverage offerings for the various outlets that are consistent with the overall property’s goals and objectives.
- Ensure the budget for the department is monitored and adhered to by implementing effective controls of food, beverage, and labor costs.
- Monitor all Food and Beverage outlets to ensure they are in compliance with state and local laws and regulations.
- Possesses excellent vendor relations and negotiating skills.
- Keep abreast of competitive changes including industry trends and the local competitive
- Ensure F & B Managers and Supervisors are fully informed of all problems or matters requiring their attention.
- Prepare and submit all required reports in a timely manner.
- Organize and conduct department meetings on a regular basis.
- Ensure timely purchase of F & B items within budget allocation.
- Oversee operations of the Employee Dining Room
- Ensure compliance with all local liquor laws, and health and sanitation regulations.
- Ensure departmental compliance with SOP’s.
- Ensure the training of department Managers and Supervisors on SOP’s, report preparation, and technical job assignments.
- Interview candidates for F & B positions and follow all standards for hiring and approvals.
- Performs all responsibilities in compliance with current federal and state/provincial regulations, the regulations, and departmental policies and procedures.
- Address guest concerns and or complaints in a timely and professional manner.
- Using the Nugget’s system of recognition, recognize team members who are going “above and beyond” as appropriate.
- Knowledgeable of and consistently follow Nugget policies and procedures as well as appropriate local, state, and federal regulations.
- Perform work in a safe manner and always maintain a safe environment for fellow team members and guests alike.
- Immediately report unsafe conditions, team member or guest incidents to Security, Management, and the Safety Manager.
- Maintain a positive and professional image for the Nugget when performing duties or representing the Nugget and encourages others to do the same.
- Regular predictable attendance is required.

REPORTING RELATIONSHIPS: General Manager
MINIMUM REQUIREMENTS:
EDUCATION LEVEL:
Degree in Hotel/Restaurant Management or equivalent experience in a large-scale hotel, resort, casino environment required.
LANGUAGE:
Effectively communicate with others both verbally and in written form using the English language.
EXPERIENCE:
Minimum of 8 years food management experience in the following outlets: casual restaurants, specialty, theme or cuisine restaurants, VIP and fine dining.
SPECIAL SKILLS:
Advanced skills in Microsoft Office Suite including Word, Excel, Outlook and Power Point.
Agilisys, and other software designed for restaurant POS systems.
LICENSE/CERTIFICATION:
Alcohol Awareness Certification is required.
May be required to obtain employee gaming registration, and Serve Safe Certification.
PHYSICAL DEMANDS AND WORK ENVIRONMENT:
Ability to walk, stand, or sit for extended periods of time.
Ability to lift, and move product up to 75 lbs.
Fine finger manipulation.
Work environment may include smoke and variable temperature, lighting, and noise levels.
Work may be performed indoors and outdoors during special events.
