Summary

ASM Global, the leader in privately managed public assembly facilities, has an excellent and immediate opening for a Sous Chef at the Shreveport Convention Center/Municipal Auditorium in Shreveport, Louisiana.   Under the direction of the Executive Chef and Director of Food & Beverage the Sous Chef team member's primary responsibilities include the following functions in accordance with ASM policies.

Essential Duties and Responsibilities

  • Comply with Standards of Service and assist in assuring the same from all kitchen employees.
  • Manage the event day operation of the kitchen, coordinate food production and ensure the highest level of food quality, taste and presentation.
  • Participate in food preparation, to ensure consistently high-quality food, taste and presentation. Expedite during peak meal periods as needed.
  • Establish goals for the kitchen; anticipate and resolve problems concerning all facets of the kitchen; anticipate trends, enact approved profit-oriented and cost saving ideas/activities.
  • Establish and require strict adherence to health department, sanitation and food handling guidelines
  • Develop menus; create and ensure adherence to recipes and product specifications.
  • Complete daily food orders based upon scheduled events and projected levels of business.
  • Conduct regular inspections of the entire kitchen/dishwashing areas and coolers and promptly act to correct deficiencies found during inspection
  • Make certain that proper inventory levels are stocked and maintained.
  • Other duties may be assigned

Supervisory Responsibilities    

Directly supervises kitchen personnel and carries out supervisory responsibilities in accordance with ASMGlobal Shreveport Convention Center/Municipal Auditorium/Savor policies and applicable laws. Responsibilities training employees; planning, assigning duties.

Working Conditions

  • Ability to work long and irregular hours that may vary due to functions and may include day, evening, weekends, and holidays and can work flexible schedule

Qualifications

  • Must be 18 years of age or older
  • Excellent customer service skills
  • Must be able to pass a background check to include a credit history report and meet corporate minimum requirements.

Certifications

  • ServSafe Certified

Education and/or Experience        

Computer Skills  

  • 1 year of supervisory experience
  • Microsoft
  • 2 years’ Experience in culinary

Physical Demands

The physical demands described here are representative of those that must be met by the Executive Chef team member to successfully perform the essential functions of this job. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.

While performing the duties of this Job, the team member is regularly required to stand, walk for extended periods of time as well as stoop and bend. The team member must occasionally lift and/or move up to 100 pounds. Specific vision abilities required by this job include close vision for quality control of food services. Must be able to withstand loud noise in the environment and extreme low and high temperatures.
