Job Summary: The Bar Manager oversees all aspects of the beverage program including staff development and education, operational systems, financial and inventory controls, and Department of Health compliance. You will be the driving force behind creating an exceptional guest experience at the bar, optimizing the bar’s financial performance, maintaining a clean and safe environment, and ensuring all beverages are prepared and served to the highest standard.
Key Responsibilities
Staff Management
- Recruit, hire, train, and supervise bar staff and bar prep staff
- Retain talent by inspiring, teaching, and embracing a culture of development.
- Ensure that operational and training standards are consistently followed.
- Hold all employees accountable to SHG’s cultural values, goals, and standards.
- Properly communicate and create an environment where new company initiatives are supported and embraced by the staff.
- Foster a positive work environment and encourage team collaboration.
- Execute corrective coaching when applicable
Staff Education and Training
- Lead and foster a bar culture that promotes employee development and coaching on a daily basis.
- Support continued education of hourly team members by being involved in daily training, line ups, and tastings.
- Provide ongoing staff beverage education and maintain all beverage education materials.
- Update staff on beverage menu changes and provide education on new items.
- Train and evaluate staff performance, ensuring they are knowledgeable about the menu and bar operations.
- Create individual staff benchmarks and provide constructive feedback for development.
Bar Operations and Maintenance
- Manage bar systems, including proper setup and breakdown, prep/produce inventories, and waste logs
- Ensure all beverages are prepared to the highest standard and served consistently.
- Communicate bar operational goals to management team in order to achieve targets
- Maintain organization in the liquor room and bar areas.
- Prepare prep schedules
- Ensure bar cleanliness, safety, sanitation, in accordance with DOH standards
- Address restaurant maintenance and facility requests.
Inventory and Stock Management
- Manage ordering of liquor, beer, sake, wine, non-alcoholic beverages, and produce.
- Conduct weekly bar inventory and maintain inventory of all bar supplies
- Conduct regular inventory investigations and manage costs to minimize waste.
- Employ a proactive approach to managing prime bar costs
- Manage bar invoices and approval in MarginEdge.
- Oversee beverage COGS and ensure accurate MarginEdge recipes and product mapping.
- Maintain relationships with suppliers to source high-quality ingredients and products.
Guest Engagement
- Ensure consistent execution of food, beverage, service, and hospitality that aligns with the Sunday Hospitality values.
- Effectively handle guest problems, including anticipating, preventing, identifying, and solving problems as necessary
- Perform table touches at every service to ensure guest satisfaction and cultivate regulars.
Qualifications
- Minimum of 1 year experience in a senior management position overseeing a full-service restaurant
- Proven track record of leading high-caliber, upscale service
- Proven experience working with event execution
- Strong knowledge of all bar program beverage categories and bartending techniques
- Ability to manage inventory and control prime bar costs
- A self-driven, results-oriented, and proactive attitude
- Ability to remain composed under pressure and solve problems quickly
- Ability to effectively train, coach, evaluate, and discipline direct reports
- Ability to lead a dynamic and motivating pre shift meeting or training session
- Skilled in conflict resolution
- Strong organizational and multitasking abilities to consistently meet deadlines
- Understands and applies environmental awareness (music, temperature, lighting, cleanliness)
- Proficiency with MarginEdge restaurant management software, or similar program
- Proficiency in POS systems
- Proficiency in reservation systems
- NYC Food Protection Certificate
- Knowledge of health and safety regulations
- Ability to work flexible hours, including nights, weekends, and holidays.
