As a crew member in the smokehouse your job entails handling of the raw and cooked products to be made and product. Your responsibility is to ensure each product is being made correctly according to each order and the recipe. As a smokehouse crew member you are also responsible for following all food safety and sanitation protocols.

Description of responsibilities:

· Mixing and making product for custom orders as well as for our retail production.

· Cleaning equipment daily to avoid cross-contamination with all products you handle.

· Follow all food safety and sanitation protocols.

· Inform your team leader of any friction in the work environment.

· Be able to perform your daily tasks efficiently.

· Grinding out lugs of meat per each products requirements.

· Cutting up beef and pork to be able to fit through the grinder.

· Lifting 50 pounds on a daily basis.

· Putting product into the smokehouse and selecting the correct program to cook different products.

· Pulling product from the smokehouse and putting it into the cooler to match the cooling critical limits.

· Track orders and make sure custom orders are not mixed up, make sure each product is being made according to how it was ordered.
