What are the responsibilities and job description for the Food Service Director for Coed Summer Camp position at Camp Cayuga?
* This job is located in Pocono Mountains, Honesdale, Pennsylvania about 2½ hours from NYC & Philadelphia. You are required to reside at the camp for your employment.
* Seeking an experienced professional Food Service Director who is skilled in managing the entire food service operation for a residential coed summer camp with 600 campers/staff. Summer position from Mid-June to Late-August. Housing, meals, and laundry service provided.
FOOD SERVICE DIRECTOR - RESPONSIBILITIES:
* Provide the highest quality of food service.
* Maintain standards set forth by Cayuga, Dept of Health, and the American Camping Association (ACA) regarding food preparation, serving, and storage.
* Order all food, milk, bread, produce, and other kitchen supplies from designated purveyors.
* Supervise deliveries, and keep organized records of all invoices & shipping receipts.
* Ensure sufficient amount of food is prepared, and meals are served on time.
* Ensure all ‘special meals’ for those with dietary restrictions (vegetarians, gluten-free, lactose intolerant) are prepared properly.
* Follow the camp menu and create meal planners for each meal.
* Establish ‘portion control’ guidelines for menu items.
* Manage & supervise all kitchen crew members. Assign jobs listed in the Food Service Manual.
* Coordinate days-off for cooks & all kitchen crew members.
* Enforce proper attire of kitchen staff.
* Assume cooking duties on cook’s days-off and assist daily, when needed.
* Maintain & control inventories.
* Ensure cleanliness of kitchen, dishwashing room, dining hall, food storage & chemical storage areas, and all equipment.
* Ensure all refrigerators & freezers are clean and organized. All food items to be dated.
QUALIFICATIONS:
* At least 4 years of experience managing food service operations and supervising kitchen staff. * Experience in quantity food production.
* Ability to cook for 600 people for 3 meals daily.
* Ability to manage food service personnel.
* Strong leadership & management skills, and good teaching ability.
* Ability to manage time to ensure meals are served on time.
* Stamina to work long days.
* Ability to follow direction from the Camp Director.
* Energetic mature individual with high moral character & good personal hygiene.
* Outgoing personality, and the ability to be organized & work hard.
* Preferred certifications: Serv-Safe, First aid, and CPR.
* Previous summer camp employment is preferred.
FOOD SERVICE STAFF:
Food Service Staff is comprised of a Food Service Director, cooks, and 18 kitchen crew members, all of whom have documented experience in mass food production. To learn more about Cayuga's food service and see a sample menu, see our website at www.campcayuga.com.
FOOD SERVICE FACILITIES:
* Cayuga operates two dining halls – one on Junior Campus & the other on Teen Campus.
* All food is prepared in the main kitchen on Junior Campus.
* Kitchen Description: 3 walk-in coolers; 1 large walk-in freezer; dry food storage area; chemical storage area; and dishwashing room.
* Kitchen Equipment: 1 large tilt skillet, 4 convention ovens, flat-top grill, gas burners with ovens, 4 fryolators, 3 food warmers, 1 steamer, large & small mixers, 2 slicers, 2 ice machines, etc.
