Job Description:
The Sous Chef is responsible for supporting the Governors Grill and ensuring that all food products are of good quality and presentation.
Job Requirements:
- Help oversee and supervise the kitchen staff under the guidance of the Room Chef and Executive Chef.
- Ensure that the quality and presentation of all food displays meet company standards.
- Mastery of sauces and gravies is necessary.
- Mastery of carving, BBQ, sautéing, broiling and our specialty cuisine, as well as roasting a variety of delectable main meat dishes is necessary!
- Work at least one station, maintaining the highest quality in finished product.
- Practice proper food handling.
- Use and apply proper kitchen safety procedures and basic cooking skills.
- Ensure all workstations are always clean during service time.
- Ensure all worktables and cutting boards are disinfected and sanitized.
- Ensure kitchen and Health Department sanitation requirements are always maintained.
- Ensure that no food leaves the kitchen without a ticket, including the manager’s meals.
- Properly wrap, label, date and store all food items in their proper areas.
- Maintain a positive and professional demeanor during all interactions with guests, fellow team members, and vendors.
- Assist in ordering products for the room through purchasing system.
- Assist in Scheduling and other administrative duties.
- Other duties as assigned.
Qualifications
Education and Experience:
- Must be at least 21 years of age.
- High School Diploma and/or GED preferred
- Must have 5 years cooking, supervising and or managing others experience in this capacity.
Additional Requirements:
- Must be able walk and stand for prolonged periods of time.
- Must be able to lift and carry a minimum of 10lbs or more.
- Ability to work in a team and independently.
- Ability to maintain composure in a fast paced and potentially stressful environment.
- Flexibility to work varied shifts, including weekends and holidays, with variable overtime.
- Must be able to tolerate areas containing secondary smoke, high noise levels, bright lights and dust.
- Excellent verbal and written communication skills.
