Charlie Palmer Collective is seeking a Beverage Director who has a profound interest in food and wine, the drive and experience to oversee a remarkable property’s beverage and wine program that services multiple F&B outlets, and a passion to meet the highest standards in our industry. As Beverage Director, this person is responsible for overseeing the beverage program for the property with an emphasis on wine and craft cocktails/mocktails. This person is detail-oriented with a proven track record of curating innovative, profitable, and guest-focused beverage and wine programs, is adept at developing unique and comprehensive wine lists that complement culinary offerings and has a deep understanding of wine regions, varietals, and sustainable sourcing, along with extensive experience in staff training and service excellence. This leadership role includes the execution and delivery of the highest level of service and experiences for all guests, coordinating daily with the culinary and banquet departments, maximizing revenue and managing costs and the budget of property dining and bar outlets.
Please note, this role may require relocation to one of California’s most coveted wine countries and is an on-premises position.
Role and Responsibilities:
- Report to Director of Food & Beverage and property management team.
- Oversee and manage the beverage program and all property outlets, banquet events, and amenities.
- Develop innovative and seasonal beverage menus for all F&B outlets and programs, including wine, spirits, cocktails, coffee, and non-alcoholic offerings.
- Collaborate with culinary and banquet teams and outlet managers to create cohesive pairings and enhance the guest experience.
- Manage the look and feel, daily set-up, and arrangement for all F&B areas to ensure proper room preparation and execution for service, including set-up of tables, chairs, linens, table settings, lighting, musicality, and more.
- Identify talent, hire, manage, and train service staff in all technical and non-technical aspects of their role including property standards of quality and service.
- Conduct regular tastings and training sessions to enhance the staff’s product knowledge and service skills.
- Ensure all service staff adhere to the property’s uniform and appearance standards, acknowledgements, policies, etc.
- Monitor beverage costs and implement strategies for waste reduction and cost control while participating the financial review and performance of P&Ls and budgets.
- Conduct regular beverage inventories and bar and beverage supplies per property schedules and standards.
- Assist management in controlling costs of all outlets, as requested, in purchasing, maintaining effective profit and loss controls and monitoring labor costs following demand patterns, budget and local labor laws.
- Oversee procurement, storage, and stock rotation of all beverage products and manage vendor relationships while negotiating pricing and contracts to ensure best value.
- Opens and close all F&B outlets on a regular basis.
- Make rounds of all food and beverage outlets to ensure member/guest needs are met and management and staff have support.
- Engage with guests to provide personalized recommendations work to constantly improve guest service levels for all outlets and events.
- Act as the property’s beverage ambassador, representing the brand at industry events and fostering local partnerships.
- Follow and adhere to all property SOPs, policies and procedures.
- Ensure all beverage areas and staff comply with health, safety, and licensing regulations.
- Become well versed in using and maximizing functionality of all restaurant and bar systems and applications.
- Stay in touch with industry trends and remain innovative.
Prerequisite Qualifications:
- Minimum 5 years’ experience in a qualified position and property food & beverage division, preferably in a luxury hotel or fine dining environment
- A passion for hospitality, food and beverage, and the guest experience
- Strong knowledge of wines, spirits, mixology, and beverage trends, with a focus on wine
- Proven leadership and team development skills
- Excellent organizational and financial acumen
- Experience with restaurant technology and applications
- Certification in wine/spirits (e.g., WSET, Court of Master Sommeliers, Cicerone) is a plus
- Ability to work flexible hours, including evenings, weekends, and holidays
