What are the responsibilities and job description for the Chef de Partie position at Charlotte Country Club?
General Description:
The Chef de Partie will assist in maintaining smooth operations of the kitchen during assigned shifts. Chef de Partie will ensure food is prepared according to the Executive Chef’s specifications and assist in training line staff to the Club and kitchen’s standards. The Chef de Partie is responsible for the kitchen operations in the absence of the Executive Chef or Executive Sous Chef on duty.
Essential Functions:
- Manage all aspects of our members’ needs as they relate to culinary, recipes, plating guides and sanitation standard.
- Consult daily with Executive Chef, Executive Sous Chef, and Sous Chef for daily MEP tasks.
- Assist Executive Culinary Team in communications with the Culinary and Service Teams.
- Set up and service a la carte station following the station and plating standards.
- Follow set recipes as instructed by Executive Chef.
- Practice sanitation and safety standards to insure a safe work environment.
- Contribute to the positive atmosphere and culture of the kitchen.
- Maintain all cleanliness standards.
- Participate, support, and make recommendations for ongoing club programs with continuous improvement in product and services.
Qualifications & Requirements:
- Culinary degree with emphasis on baking & pastry is preferred, high school or equivalent education required.
- Minimal formal experience is required; however, the desire to learn and possess an ambition to be an Executive Chef is required.
- Must be able to read and write to facilitate the communication process.
- Requires superior communication skills, both verbal and written.
- Must possess basic computational ability.
- Ability to read recipes and follow their instructions.
- Ability to perform more technically advanced recipes and techniques.
- Ability to physically self-demonstrate culinary techniques, i.e., cutting, cooking principles, plate presentation, and safety.
- Must have a flexible schedule to be able to workdays, evenings, weekends, and holidays as a full-time employee.
Hours/Schedule:
- Must be able to work nights, holidays and weekends.
