What are the responsibilities and job description for the Commissary Pastry Cook I position at Columbus Hospitality Management?
Primary Responsibilities :
- Follow recipes and progressions.
- Confection of mousses, creams, ganache, chocolates
- Confection of petit gateaux, decoration, and storage.
- Confection of large desserts, wedding cakes
- Packaging of baked goods
- Finishing touches on tarts, entremets, and petit gateaux for the Pastry Boutique
- Organizes ingredients, recipes and / or supplies to ensure consistency and an organized and efficient production of all menu items.
- Performs all functions and jobs as needed with the ability and knowledge to create advanced baked goods, specials and assist with menu development.
- Oversees production in the kitchen
- Ensures completion of all prep and menu items in accordance with recipes and special requests.
- Communicates between shifts and ensures adequate prep for the next shift.
- Coaches, trains, develops, and supports all team member training and advancement
- Communicate supply levels and conducts inventories of kitchen items
