Job Description:
A Banquet Captain/Floor Lead is a lead server who works closely with and directly under the catering manager in co-leading events. They are primarily responsible for all other catering staff by modeling professionalism in every environment, helping oversee that the service of an event runs smoothly, and that each task is completed in a timely manner. They are required to meet both the manager’s and client’s needs and expectations, then relay that information to the rest of the staff for a successful, memorable event.
A Banquet Captain/Floor Lead participates in an event from start to finish. That being from load-in, to set-up, to service, to cleanup, breakdown, and load-out. Our ideal candidate has a positive attitude with a willingness to learn and grow within the company, as well as the flexibility to switch up tasks according to the help needed. They also enjoy interacting with people and working on group projects, because it does take a team to make an event possible.
Job Duties & Responsibilities:
- Assist in the load-in, set-up of the event, food and beverage service, breakdown and load-out of the event
- Lead a team of servers to strive for success and professionalism
- Provide onsite training for newer staff on appropriate and functional table and station/buffet setups, proper service, and efficient cleanup
- Support and communicate with staff in the setup for the event by placing table settings out and building buffets and stations that align with the client’s vision and company standards
- Carry out tables, chairs, bars, and all necessary catering equipment for setup to designated areas
- Coordinate with staff and event coordinators to ensure that tables are appropriately set with the correct number of place settings which includes China, glassware, and flatware that are clean, polished, and presentable for professional photos and videos
- Effectively and promptly communicate with guests, venders, chefs, bartenders, servers, managers, and clients regarding questions, requests, concerns, complaints, conflicts and any additional needs they may have throughout the event
- Accurately serve food and drinks in a timely manner using proper rules of etiquette
- Participate in the setup, replenishing, and removal of food stations as necessary
- Regularly buss tables or guest-filled areas of the event to keep cleanliness
- Tray pass food and drinks to guests while being knowledgeable in what is being offered to them and whether there are any allergens
- Follow assigned tasks provided from the catering manager efficiently and with a calm, positive attitude
- Organize meetings and share important, detailed information regarding the event with the rest of the staff and keep them up to date on any changes throughout
- Assign roles to servers during their shift and provide necessary training opportunities when/if needed
- Maintain presence, attentiveness, promptness, and professionalism while under pressure and meeting deadlines
- Coordinate with bartenders on preparation for tray passed drinks and any alcohol service to the tables for servers
- Regularly report to the catering manager and coordinator/client throughout the event to make sure everything is running on time and smoothly
- Address any potential challenges by connecting with the catering manager, coordinator, and/or client to collaborate on a resolution
- Maintain good rapport with coworkers and clients
- Check in staff upon their arrival and sign them out at the end of their shift. Track staff’s hours and manage their required meal breaks by following the state’s laws
- Execute seamless service and professional engagement with VIP guests/tables
- Assist chefs and other kitchen staff with food preparation, including plating and garnishing dishes
- Coordinate with other staff members (BOH & FOH) to ensure a smooth flow of service and offer support to where it is needed
- Maintain cleanliness and organization of serving areas
- Comply with the company’s and state’s sanitation procedures
- Plan ahead for all tasks that need to get done and be prepared for any possible outcome
Requirements & Skills:
- A valid California Food Handler certificate
- Former catering/serving experience strongly preferred
- Must have former leadership and training-type roles
- Must have reliable transportation and the willingness to commute to job sites that are located in Ventura County and Los Angeles County areas
- Ability to lift a minimum of 25 pounds unassisted
- Must be comfortable with being on your feet for long periods of time, carrying and lifting trays of food and bussed items, rolling tables and chairs for setup and breakdown, maneuvering catering equipment around the event space (in areas including but not limited to) whether it is up and down uneven ground, slopes, stairs, etc.
- Must be comfortable with working in the different elements as many events take place outdoors
- Must be available to work long shifts on weekends and in the evenings
- Ability to work independently and as part of a team with strong leadership skills
- Maintain a positive attitude in a stress induced setting
- Ability to problem-solve quickly when under pressure and adapt to changes that may occur at any point
- Ability to take initiative in identifying actionable tasks outside of normal duties
- Strong communication skills and the ability to follow verbal and written instructions
- Ability to work efficiently in a fast-paced and deadline-driven environment
- Strong attention to detail and creativity in the event setup process
- Must be reliable, well-organized, and ready to jump in to help when needed at any given moment
- Flexible and adaptable to perform different but related tasks at any given time based on the needs and as requested by the catering manager
