Job Summary
Prepares, packages, and labels sushi, meals, entrees, salads, party trays. Follows Costco standards for food preparation and sanitation. Cleans and sanitizes the sushi prep area, sushi equipment and sushi utensils. Maintains a clean work area. Restocks supplies as needed
Duties
Job Duties/Essential Functions
● Follows Costco formulas and diagrams and monitors finished products to see that department consistency and quality standards are met. Complies with health code, such as sanitation, temperatures, and pull dates. Upholds safety and security procedures.
● Brings cases of fish, up to 50 lbs., from cooler and empties contents onto fish cutting or other preparation area. Restocks fish/sushi supplies and boxes of fish up to 50 lbs
. ● Prepares and cooks rice, cuts, slices, cubes, raw fish, vegetables for sushi rolls, salads, poke, entrees, and garnish on prepared foods. Labels, rotates ingredients, work in process. Assembles, packages, weighs, prices, rotates product in merchandise display case
● Performs preventive maintenance for machinery, equipment, and implements. Cleans equipment by disassembling and spraying with a cleaning and sanitizing agent and wiping base. Washes and sanitizes parts in a 3-compartment sink or commercial dishwasher.
● Restocks and assembles large boxes of ingredients and supplies in the prep area.
● Counts product on hand, figures production needs, and documents production on daily form. Fills out time and temperature record forms. Records product to be salvaged, damaged, or destroyed for Manager audit. Completes sanitation checklist after final cleanup.
● Cleans sushi area by sweeping, mopping, spraying, wiping, scrubbing, and low-pressure washing. Empties drain screens, empties trash. Operates trash compactor and cardboard baler. Performs SSOP’s, SOP’s.
● Provides and ensures prompt and courteous member service.
● Ensures proper cleanup and disposal of potentially hazardous materials
Qualifications
Ability to operate vehicles, equipment or machinery: Rice cooker, kettles, rice washer, vinegar tumbler, rice washer, commercial dishwasher, knives, sushi rollers, wrappers, labelers, sushi slicer, combination heat/steam oven, weigh & price scale, wrapping machine, shears, knife, large wheeled racks, lo-pressure washer, cardboard baler, trash compactor, manual pallet jack, blast chiller, air hose cleaner, step ladder
Previous experience in a dietary aide or food service role is preferred but not required.
Familiarity with food preparation techniques and knowledge of kitchen equipment is a plus.
Strong organizational skills with attention to detail in record-keeping.
Ability to work effectively in a fast-paced environment while maintaining high standards of quality.
Excellent communication skills for effective collaboration with team members.
Knowledge of food handling practices and safety regulations is advantageous.

Salary : $40,500 - $64,400
