Job Title: Sausage Maker / Production Assistant ( we are willing to train )
We are a small family owned meat market. We have a great team of people and have fun while we work. We have won several awards for our meats and sausages. We are looking for a new team to become a full time sausage maker.
Reports to: Production Manager
Job Summary:
The Sausage Maker is responsible for the preparation, production, and processing of house-made sausages and smoked meats in a small meat market. This role involves mastering various sausage-making techniques, ensuring product quality, and supporting the overall operations of the production team. A keen attention to detail, a commitment to food safety, and a passion for quality meat products are essential.
Key Responsibilities:
- Sausage Production:
- Prepare and produce various types of sausages according to established recipes and USDA standards.
- Safely handle and process raw meats, including grinding, mixing, stuffing, and linking sausages.
- Ensure adherence to recipes, including proper spice blend measurements and seasoning throughout the production process.
- Smoking Operations:
- Operate and maintain smoking equipment, ensuring the quality and flavor of house-smoked meats.
- Monitor temperature and humidity levels during the smoking process to achieve optimal product outcomes.
- Quality Control:
- Inspect all meat products for freshness, texture, and appearance, maintaining high-quality standards.
- Document production activities and perform regular checks to ensure compliance with food safety regulations.
- Kitchen and Equipment Management:
- Keep the production area and equipment clean and organized, following all sanitation and safety protocols.
- Assist in maintaining inventory levels of raw materials and supplies, alerting management of restock needs.
- Collaboration:
- Work closely with other members of the production team to enhance workflow and efficiency.
- Participate in team meetings to discuss production goals, Production calendar, challenges, and improvements.
- Training and Development:
- Stay informed about industry trends, meat processing techniques, and new recipes.
- Assist in training new team members on sausage-making processes and food safety standards.
Qualifications:
- High school diploma or equivalent; culinary or food science education is a plus.
- Previous experience in meat processing, butcher work, or a similar role preferred. However we will train someone who is interested in a career in the meat business.
- Basic understanding of sausage-making techniques and flavor profiles.
- Strong attention to detail and commitment to quality and food safety practices.
- Excellent communication skills and the ability to interact with customers positively.
- Ability to work in a physically demanding environment, including lifting heavy items (up to 50-75 lbs) and standing for long periods.
Physical Requirements:
- Must be comfortable working in cold environments typical of meat processing and storage areas.
- Ability to perform repetitive tasks and adhere to safety protocols.
Working Conditions:
- Primarily in a meat processing environment, interacting with team members and customers. Shifts may include early mornings, evenings, and weekends.
