Summary And Scope
The Assistant Chef is responsible for supporting the Food Service Manager (FSM) & Chef in executing Back of House (BOH) operations in accordance with the dining facility contract. This role requires high culinary expertise and attention to detail to ensure quality meal preparation and service. The Assistant Chef must have experience in food preparation within an executive-level dining atmosphere. Additional responsibilities include assisting with food service equipment management, maintaining high sanitation standards, and ensuring compliance with food safety regulations.
This position is contingent upon successful contract award

While performing the duties of this job, the employee is regularly required to talk, see, hear, sit for extended periods, stand, walk, engage in repetitive motions, and use hands and fingers to manipulate objects, tools, or controls. May lift and carry materials and equipment weighing up to 25 pounds.
Expected Hours of Work
The ability to work flexible hours including nights, holidays, and weekends will be required based on contract needs. It is expected for this position to attend regular meetings during typical work hours in Eastern Standard Time as well as meetings as needed for assigned projects in other time zones.
Work Environment
This job operates in office, facility, and field environments. We operate 24/7/365, inside and outside, in all weather conditions. This role routinely uses standard kitchen equipment, standard office equipment, and is required to use and wear standard PPE, which will be provided by the company. There is an expectation of clear communication in English both written and orally.
Travel
This position requires 10% travel. Travel is dependent on contract load. The ability to travel to job sites and be away for extended periods of time based on contract needs is required. Short notice travel is required with 24-48 hours’ notice.

Essential Functions
- Food Preparation & Cooking
- Serve as a cafeteria-style cook, preparing and cooking for high-volume food service
- Prepare established rotating menu items according to specifications and contract requirements
- Follow routine, repetitive steps to make hot and/or cold meals, and slice and mix ingredients as needed
- Perform a versatile cooking skill set, including frying, roasting, grilling, sauteing, braising, baking, and steaming
- Take special orders or unusual food requests from customers
- Perform safe and proficient knife skills
- Sanitation & Safety Compliance
- Maintain cleanliness in preparation, work, and display areas, including cleaning counters, trays, and washing dishes
- Inspect and clean kitchen equipment
- Assist in performing Hazardous Analysis and Critical Control Points (HACCP) program
- Perform equipment sanitation and maintenance as applicable
- Maintain high sanitary, hygienic, and safety standards and conditions at all times
- Properly label and store potentially hazardous foods (PHFs)
- General Support
- Receive, unload trucks, and store stock
- Perform basic math for portioning and food waste management
- Communicate effectively with the Executive Chef to ensure proper quantity and quality of meals are ready at service time
- Perform all duties with a pleasant attitude toward staff and customers alike
- Execute catering events, including preparation, setup, serving, and cleanup
- Perform all other duties assigned by the Food Service Manager or Executive Chef
Skills And Specifications
- Excellent written and verbal communications skills in English
- Possess a current ServSafe Food Handler’s Certificate or equivalent federally recognized health and sanitation program
- Possess or be willing to acquire ServSafe Food Allergen Certification at the company’s expense
- Thorough understanding of quality customer food service and preparation of a variety of nutritional meals from different cultural backgrounds
- Knowledgeable in food inventory control
- Knowledgeable in HACCP, TB MED-530, FDA and U.S Department of Health and Human Services Food Code standards
- Associate degree is required
- 3 years’ experience in large-scale government dining facility (or similar) cooking, or equivalent cooking experience in an executive-level dining facility

- Must pass a drug test, motor vehicle record check, occupational health physical and lift test (if applicable), credit check (if applicable), and a background check upon accepting a conditional offer of employment.
