The Sous Chef will work in conjunction with the Dining Facility Manager and Head Chef to oversee and execute the food service contract for the Dimmit facility. The Sous Chef responsibilities include supervising the food prep and cooking, maintaining a fully stocked kitchen inventory, and complying with safety and cleanliness standards. To be successful in this role, you should be able to manage the kitchen staff and guide them to deliver quality food on time. Additional responsibilities include implementing department policies and best practices and ensuring proper training and accountability of these policies with the food service team as well as weekly and/or biweekly check-ins with their staff to ensure training goals are being met.

Essential Functions
- Assist with overall Food Service operations including ordering, training, inventory, quality control and sanitation compliance for Greensboro facility
- Complete and delegate day-to-day tasks to Assistant DFAC Managers and staff
- Ensure compliance with old and new policies
- Assist Personnel in implementing and overseeing training and safety programs
- Assist Personnel with Progressive Action Forms and employee feedback
- Review and complete staff evaluations and create training goals for staff in conjunction with the Growth & Development Team
- Assist FS Managers with contract asset planning
- Oversee food service equipment on-site and maintain operational readiness
- Ensure that HACCP procedures are followed
- Coordinate equipment service calls with Food Service Vendor/Procurement Manager when required
- Ensure all contract requirements are being met when actively managing a site
- File Daily Field Report when actively managing a site
- Ensure Sanitation Inspections are completed daily when actively managing a site
- Other duties as assigned
- Intermediate level of proficiency with Microsoft Office Word and Excel
- Knowledgeable in inventory control. HACCP, TB MED-530, FDA and U.S Department of Health and Human Services Food Code standards
- Thorough understanding of quality customer food service and preparation of a variety of nutritional meals from different cultural backgrounds
- Excellent leadership & management experience and communications skills
- Ability to work flexible hours in a 24/7/365 business environment
- High School diploma or equivalent, required
- 5 years' experience in large scale government dining facility operations or equivalent operations
- Possess a current manager level ServSafe certificate or equivalent federally recognized health and sanitation program
- Must be authorized to work in the U.S.
- Must be able to travel within the Continental United States (CONUS)
- Must pass a motor vehicle record check and employer and government (eQIP or eAPP) background checks after accepting a conditional offer of employment
