Position Summary
The Executive Sous Chef is responsible for assisting the Executive Chef in managing kitchen operations, leading the culinary team, and driving menu development to ensure the highest standards of food quality, presentation, and innovation.
Essential Functions
- Leadership: Supervise and coordinate activities of cooks and kitchen staff, fostering a positive and productive work environment.
- Menu Development: Collaborate with the Executive Chef on menu planning and development, incorporating seasonal ingredients and innovative culinary techniques.
- Quality Control: Ensure consistent and high-quality food preparation and presentation, maintaining the restaurant's reputation for excellence.
- Inventory Management: Monitor inventory levels, assist in ordering supplies, and manage cost control measures.
- Kitchen Organization: Maintain cleanliness and organization of kitchen areas, ensuring compliance with all health and safety regulations and procedures.
- Staff Training: Train and mentor kitchen staff, promoting continuous learning and development.
- Operational Management: Manage kitchen operations in the absence of the Executive Chef, ensuring seamless service and efficiency.
Additional Responsibilities
- Adhere to all work rules, procedures, and policies established by the hotel, including, but not limited to, those contained in the employee handbook.
- The hotel operates 7 days a week, 24 hours a day. Department schedules must accommodate fluctuating business demands, and employees may be asked to work shifts other than those they prefer or normally work.
Education and Experience
- Culinary degree or equivalent experience.
- Extensive experience as a Sous Chef or in a similar leadership role in a high-end restaurant.
- Proven track record in menu development and culinary innovation.
