Position Summary:
Cindy Lou’s Fish House, a beautiful blend of modern design and traditional elements, is nestled within the Canopy by Hilton Baltimore Harbor Point hotel. Celebrated for its Southern-inspired cuisine, Cindy Lou’s Fish House offers a stunning waterfront dining experience. The restaurant is driven by a passion for Southern food, impeccable service, and delightful wine and cocktails. Guests can enjoy breathtaking views of the iconic century-old Domino Sugar refinery in Baltimore’s Inner Harbor. The restaurant, with its wrap-around bar and expansive patio, enhances the luxurious experience synonymous with the Hilton brand.
We are seeking an experienced manager to oversee and supervise various aspects of the food and beverage department. This role also involves managing hotel operations, including complimentary services, the restaurant, in-room dining, and banquets.

Essential Functions:
- Oversee and manage daily operations of the food and beverage department, ensuring seamless service delivery.
- Maintain and enforce daily quality and presentation standards in line with brand expectations.
- Address guest feedback and resolve complaints promptly to ensure guest satisfaction.
- Conduct comprehensive training programs for staff on job competencies, hotel policies, and service standards.
- Ensure compliance with brand standards and operational guidelines.
- Monitor staffing levels to optimize guest satisfaction and control labor costs.
- Conduct regular reviews to ensure departmental compliance with brand and hotel standards.
- Handle staff inquiries and issues with professionalism and efficiency.
- Implement and oversee food safety and sanitation protocols in accordance with HACCP guidelines.
- Collaborate with the sales and housekeeping teams to ensure successful execution of banquets and events per BEO specifications.
- Demonstrate positive leadership to motivate and inspire team members to exceed performance standards and guest expectations.
- Manage the training, development, and performance of all food and beverage employees, including supervisors and line staff.
- Maintain strict procedures for the security and proper storage of food and beverage products, inventory, and equipment.
- Ensure the security of financial transactions and timely replenishment of supplies and inventory.
- Implement waste reduction and loss prevention strategies.
- Ensure all food and beverage equipment is operational and maintained according to manufacturer specifications.
- Maintain cleanliness and proper stocking of banquet and convention spaces based on business volume.
- Coordinate with Engineering for immediate attention to maintenance and repair needs.
- Conduct inventory management in line with established procedures and assist in determining optimal stock levels.
- Ensure compliance with all hotel and brand policies, as well as local, state, and federal regulations.
- Assist with bi-weekly payroll processing, including managing missed punches and tip sheets.
- Exhibit leadership qualities as outlined in the DHS Leadership Job Requirement Chart.
- Engage with external contacts, including guests, vendors, and other stakeholders, to ensure satisfaction and resolve issues.
- Serve as Manager on Duty or assist with other duties as assigned.
Education and Experience:
- Extensive experience in food and beverage operations.
- Proven supervisory or management experience.
- Certification in Food Sanitation is advantageous.
- TIPS Certification is advantageous.
Skills and Abilities:
- Excellent verbal and written communication skills.
- Certified food handler.
- Ability to thrive in a fast-paced, high-volume environment.
- Strong ability to motivate and train employees in guest services.
Additional Responsibilities:
- Adhere to all work rules, policies, and procedures established by the hotel, including those in the employee handbook.
- The hotel operates 24/7. Department schedules must accommodate fluctuating business demands, and employees may be required to work shifts outside their preferred or normal hours.
- This position primarily focuses on dinner service and evening events, requiring the ability to work closing shifts. Shifts outside of dinner service may be scheduled based on the needs of the restaurant and hotel, mainly covering PM hours of operation.
