Job Description
The Culinary Operations Manager will be responsible for leading the culinary operations within Ellis Island Casino’s diverse food and beverage outlets. This role involves managing food and beverage team members, ensuring the smooth running of kitchen operations, and overseeing the creation and execution of high-quality, innovative menus. The ideal candidate will have extensive experience in high-volume kitchen operations, a passion for food, and strong leadership skills.
Compensation
$75,000 annually, depending on experience.

Responsibilities
- Assist the Director of Food and Beverage in overseeing day-to-day kitchen operations for all food outlets, ensuring that all culinary areas run smoothly and efficiently.
- Collaborate with the Director of Food and Beverage to develop, refine, and implement seasonal and special menus across multiple outlets.
- Develop and train kitchen staff on daily specials, ensuring they align with current trends and guest expectations.
- Oversee the creation, monitoring, and execution of banquet menus for large-scale events, including special promotions.
- Oversee the culinary preparation and execution for special events, banquets, and large-scale functions. Ensure flawless event setup, food preparation, and service delivery that meets high standards for quality and guest satisfaction.
- Work closely with other departments, including Casino Operations and Marketing, to coordinate efforts and ensure seamless event execution, menu promotion, and guest experience.
- Ensure consistency in the preparation of menu items by developing recipe cards in Craftable and creating and monitoring standardized prep lists in Jolt.
- Conduct ongoing training to maintain consistency across all team members.
- Develop and implement standard operating procedures (SOPs) for kitchen operations to ensure consistency, quality, and safety. Train team members on these SOPs and maintain high operational standards.
- Ensure all team members are proficient in systems like Craftable, Jolt, and any other related software for inventory management, recipe management, and menu execution.
- Continuously train team members on consistency, quality, safety, and the use of kitchen systems.
- Manage and reconcile inventories regularly, ensuring proper stock levels and waste minimization.
- Ensure timely orders of necessary supplies.
- Monitor and manage food costs, labor, and inventory to ensure profitability while maintaining the highest standards of quality.
- Ensure all culinary operations are compliant with local health and safety regulations and lead team members in maintaining these standards.
- Oversee and manage preparation for Southern Nevada Health District (SNHD) health inspections. Conduct regular kitchen inspections to ensure all areas are up to code and maintain consistent cleanliness standards.
- Must be able to work a flexible schedule, including evenings, weekends, and holidays, to meet operational needs as necessary.
Skills / Experience
- Must have extensive food and beverage knowledge in both the front and back of house operations.
- At least 5 years of experience in culinary operations management, with at least 3 years of experience in a leadership role in a high-volume, fast-paced environment.
- Strong knowledge of culinary techniques, food safety, and health regulations.
- Proven ability to create, implement, and manage high-quality menus and kitchen systems.
- Strong interpersonal, communication, and organizational skills.
- Proven ability to manage and motivate large teams.
- Experience with systems like Craftable, Jolt, and other inventory or recipe management tools and the ability to train team members on these systems to ensure efficiency and consistency.
- Experience managing budgets, food cost control, and inventory management with the proven ability to meet or exceed financial goals.
- Expert knowledge of Southern Nevada Health District (SNHD) regulations and systems for health inspections and the ability to lead teams through successful inspections.
- Must be over 21 years of age.
- Must be able to obtain a Nevada Health Card.
- Must be able to obtain a Nevada TAM Card.
- Must be able to obtain a Nevada Gaming Registration Card.
- The ability to submit to a background check and drug test is required.
Bonus Skills / Experience
- Bilingual in English and Spanish preferred, with strong communication skills to effectively engage with our diverse team and guests.
- Culinary degree or equivalent experience is preferred.
- Previous experience in a casino or hospitality setting, preferred.
- Strong background in large-scale event and banquet management.
Physical Requirements
- Work indoors and move throughout the property, lift, bend/kneel & work outdoors less than 25% of the time.
- Hearing, vision, speech, and literacy (critical).
- Ability to work in environments that are smoky, noisy, hot, cold, or humid.
- Must be able to stand and walk swiftly for extended periods of time, bend to obtain items near the floor, carry service trays over their head, and lift up to 50 lbs. with or without assistance.
