Overview
We are seeking a skilled and dedicated Butcher to join our culinary team. The ideal candidate will have a strong background in food production and meat cutting, with a passion for delivering high-quality products. As a Butcher, you will play a crucial role in ensuring that our kitchen operates smoothly by preparing and handling various types of meat while adhering to strict food safety standards.
Duties
- Perform meat cutting and preparation tasks, including portioning, trimming, and deboning various cuts of meat.
- Ensure all meat products are handled according to food safety regulations and standards.
- Maintain cleanliness and organization of the butchery area, including proper storage of meats.
- Package and label meat products for sale or use in the kitchen, ensuring accuracy in weights and descriptions.
- Collaborate with kitchen staff to fulfill orders and meet production needs efficiently.
- Assist in inventory management by monitoring stock levels of meat products and reporting shortages.
- Stay updated on culinary trends related to meat preparation and presentation.
Qualifications
- 1 years previous meat cutting experience with beef, pork, and lamb.
- 1 year experience making sausages, grind and value added marinated meats
- Committed to food safety and knowledgeable about safe meat handling practices
- Excellent communication skills both verbal and written
- Excellent attention to detail and organizational skills
- You have managed inventory of perishable products
- You enjoy giving great internal and external service
- You are passionate about building a more sustainable and equitable food system for Hawaiʻi
- Must have TB Clearance
- Must have Food Handler’s Card
- Able to lift and carry products that typically weigh 50 lbs.
- High school diploma and are at least 18 years of age
