Description
Job Title: Restaurant Lead Chef
Reports to: Restaurant Chefs de Cuisine/Sous Chefs
Supervises: Line Cooks/ General Kitchen Workers
Job Summary:
Responsible for the supervision of all cooks in the kitchen. Assumes leadership responsibilities in the absence of both the Chef de Cuisine and Sous Chef
Responsibilities:
- Set up, maintain, and break down assigned work station when needed
- Develop and execute daily prep lists
- Delegate prep/cleaning assignments to cooks
- Hold subordinates accountable for their actions by way of departmental and club disciplinary guidelines and procedures
- Work a station on the restaurant line when needed
- Expedite at the service window when needed
- Requisition necessary food ingredients from the purchasing department
- Conduct daily pre shift meetings when needed
- Maintain clean, sanitary, and safe work station and equipment
- Adhere to state, local, and Club health and safety regulations
- Maintain neat, professional appearance and observe personal cleanliness rules at all timesSkill/Knowledge Requirements:
- Advanced knife skills
- Basic Supervisory Skills
- Basic knowledge of Microsoft Office programs
- Basic Food Cost and financial management knowledge
- Advanced Stock, Soup, and Sauce Knowledge
- Ability to create and execute written recipes
- Advanced knowledge of the identification and quality evaluation of produce ingredients
- Ability to compose and follow a prep list based on business needs
- Strong communication skills
- Advanced meat & fish ID and Fabrication
- Advanced knowledge of all basic cooking techniques (braise, poach, sauté, grill, pan fry, deep fry, broil, roast)
- Serve Safe Certification is preferred and should be attained within 12 months of holding this position
Qualifications
Qualifications:
- A minimum of 2 years of experience in a professional kitchen is preferred, but not required
Physical Requirements:
- Must be able to lift up to 40 lbs without limitations
- Must be able to twist, bend, and reach without limitations
- Must be able to work on feet and at a quick pace for at least 6 hours at a time
