Job Overview
We are seeking a skilled Japanese-inspired cuisine expert to join our team as a Lead Cook. The ideal candidate will have above-average knowledge of Japanese cooking and be passionate about culinary innovation.
Key Responsibilities
- Prepare a variety of cuisines using skill, innovation, and creativity.
- Execute food preparation according to policy, procedure, and specifications.
- Ensure compliance with airline and fresh meal specifications, personal hygiene & food handling procedures.
- Maintain workstation and kitchen cleanliness.
- Assist in departmental scheduling and control of hours and food costs.
- Help control food costs by following proper food rotation procedures (FIFO).
- Familiarize yourself with safety procedures, including safe temperatures at which ingredients must be kept and to which food must be prepared to avoid foodborne illness.
- Collaborate on complex dishes as part of a team.
- Work calmly in a high-stress, fast-paced environment.
- Comprehension and organization to follow direct orders and recipes and to correctly prepare dishes to the airline standards.
- Implement HACCP and General Manufacturing practices throughout related departments.
- Emphasize safety awareness across all relevant departments.
Requirements
- A minimum of 3 years of Japanese cooking experience in a high-volume cooking institution, airline catering, or food catering industry is required.
- Manual dexterity and hand-eye coordination to handle tools, such as knife techniques for chopping, slicing, cutting, and dicing.
- Ability to stand in one place for hours at a time, handle heat, and work shifts.
- Ability to read, speak, and write English.
- Experience/Education: 3-5 years of Japanese cooking experience preferred.
- Experience with multi-airline international customers preferred.
- Working knowledge of HACCP, USDA, and FDA compliance.
- Minimum of two (2) years as a Lead Cook in a high-volume cooking institution/airline catering or food catering industry.
