SUMMARY
The Food Beverage Director is responsible for overseeing all aspects of the Shoshone-Bannock Gaming/Hotel foodservice including event planning, budgeting, staffing, qualify control, event execution, service delivery, culinary processes and people management. Incumbent must be well-organized, excellent communicator, personable and able to manage effectively in an ever-changing fast paced environment.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:
- Overall management of Banquets, Catering and F&B outlet operations including the oversight of: interviewing, hiring, scheduling, ordering, inventory, labor costs and equipment maintenance.
- Set standards for all products served meet the established specifications.
- Meets with suppliers and maintains positive working relationships to promote Shoshone-Bannock Gaming/Hotel.
- Directs the purchasing agent in matters pertaining to the purchase of products. Ensures all products necessary for operations are ordered and delivered in a timely fashion.
- Ensures that the purchasing and preparation of all food products meet Shoshone-Bannock Gaming/Hotel standards of quality and consistency.
- Ensures staff adheres to established sanitation, health and safety standards.
- Ensures that all equipment is operated safely and with reasonable care, reporting mechanical problems to the proper department for repair. Generates and tracks work orders as needed.
- Lead and assist Food & Beverage Team with projects including training, inventory and special events.
- Responsible for completion and updating of administrative paperwork associated with events.
- Analyzes and evaluates department profits and loss statements and makes recommendations as to alternative courses of action.
- Sets performance expectations and provides coaching and operational support of the staff.
- Ensure legally compliant, efficient, professional and fiscally responsible operation of Food & Beverage department.
- Review financial reports, including budgets, projections, forecasting, revenue analysis, disbursements, capital investments, labor and product costs, wage and salary control, P&L financial statements.
- Takes responsibility to know, understand and comply with established company and departmental policies and procedures.

- Have the ability to determine when a customer has had too much to drink Attempt to limit problems and liability related to customers' excessive drinking by taking steps such as persuading customers to stop drinking, ordering taxis or other transportation for intoxicated guests, or notifying the proper law enforcement agency.
- Manage conflict resolution process with respect to staff disagreements or complaints.
- Displays best practices in handling all aspects of employee relations including corrective action, coaching and counseling, dismissal; works cooperatively with HR to ensure a positive, harmonious and compliant work environment.
- Through coaching, teaching and training, leads beverage department personnel in the proper performance of their duties; leading by positive example at all times. Documents these actions as necessary.
- Cooperate and communicates with fellow Team Members in all departments and always strives for mutual respect.
- Projects a positive, helpful image.

QUALIFICATION REQUIREMENTS:

CERTIFICATES, LICENSE, AND REGISTRATIONS
- Must be able to submit supporting documents of education and training (High School Diploma, GED, Degree and Certificates) to support qualifications.
- Must be able to obtain and maintain a gaming license in good standing according to the licensing rules and regulations.
- Must be able to obtain and maintain in good standing a Driver’s License and qualify for Fleet Management coverage on company vehicles.

- TIPS Training Certified
EDUCATION AND/OR EXPERIENCE
- High School Diploma or GED required with Associate degree in Business Management, Marketing, or Hospitality. Must have the minimum of five (6) years’ successful supervisory/management experience in Food & Beverage along with two (2) years’ hotel experience. Certified Executive Chef and Certified Culinary Administrator preferred.
- Bachelor degree in Business Management, Marketing, or Hospitality. Five (5) to ten (10) years’ successful supervisory/management experience in Food & Beverage. Certified Executive Chef and Certified Culinary Administrator preferred.
SUPERVISORY RESPONSIBILITIES:
Directly supervises all Team Members in the department. Assists in the direct supervision of all department employees on assigned shift.
Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
SPECIAL QUALIFICATIONS:
Strong organizational skills required.
