Pay Grade : 4

Salary Range : $53,677.83 - $80,516.75

Gaming Class : Compact / Gaming

Position Summary :

The primary duty of the Gold Mine Grill Manager is to assist the Food and Beverage Director and Chef in the day-to-day operations of the Gold Mine Grill. The Grill Manager is directly responsible for the supervision, organization, and scheduling of the hourly team in the Front and Back of the House, including the Grill Cashiers, Grill Cooks, Grill Dishwashers, Prep Cooks, and Lead Line Cook. This position maintains the highest quality guest experience standards through a dedication to excellence in food, guest satisfaction, cleanliness, sanitation, and safety.

Core Duties and Responsibilities :

The Gold Mine Grill Manager is responsible for the following duties :

  • Prep and execute all menu items according to standards / station / restaurant as directed by the Executive Chef.
  • Develop, mentor, and motivate line cooks, cashiers, and prep cooks.
  • Manage scheduling, payroll, attendance documentation, inventories and discipline as needed.
  • Write and cost menus.
  • Order food items and take inventory.
  • Must be capable of managing budgeted / forecasted cost of sales and labor costs.
  • Document menu changes, temperatures, meeting information.
  • Work at all stations in the Gold Mine Grill independently.
  • Work in a clean, safe, and organized manner.
  • Maintain proper fire times for tickets.
  • Provide on-going coaching and appropriate progressive discipline to employees in the Gold Mine Grill, managing appropriate documentation and ensuring that each Team Member has clarity around their current level of performance and expectations.
  • Hold regular departmental meetings.
  • Assist with the creation and management of the department’s budget.
  • Prepare reports as requested.
  • Conduct annual performance evaluations of all Grill staff.
  • Provide employee recognition and coaching to all Grill staff.
  • Supervise day-to-day operations to ensure all standards of the Gold Mine Grill are achieved during each shift.
  • Provide orientation and training according to the Gold Mine Grill training checklists, policies, and procedures.
  • Construct weekly work schedules to meet the demands of the business.
  • Maintain familiarity with all national, state, and local safety, health, and sanitation standards and ensure that all employees are following guidelines appropriately.
  • Perform additional duties as assigned.

  • Qualifications – Education and Experience :

    Minimum Qualifications :

  • A minimum of three (3) years of restaurant / hospitality experience.
  • Previous experience leading a high-volume restaurant.
  • High School Diploma or G.E.D.
  • Preferred Qualifications :

  • 5 years of experience in a related management position.
  • Culinary degree.
  • Advanced knowledge of the principles and practices within the food profession.
  • Experiential knowledge of management of people and / or problems.
  • Strong oral, reading, and written communication skills.
  • Work Environment :

    The work environment is fast-paced and requires overall good mental and physical health.

    Physical Demands :

    Job-specific abilities and requirements include :

  • Regularly required to stand, sit, walk, talk, and hear.
  • Must be able to work around changing schedules, which includes being available to work throughout the day, nights, weekends, and holidays, as required.
  • Must be able to work in an environment subject to loud noises from restaurant equipment and machinery, fumes, odors, dust, and smoke.
  • Must be able to tolerate temperature extremes that range from working near 1800-degree Fahrenheit to working in a walk-in freezer of -10-degree Fahrenheit.
  • Must be able to constantly stand and walk for extended periods of time, at least 8 hours, and traverse all parts of the restaurant quickly.
  • Must be able to lift, handle, and carry (e.g., food, small wares, equipment, supplies and paper goods) at a minimum of 50 pounds constantly, and up to 100 pounds occasionally.
  • Must be able to bend, kneel, stoop, reach, and squat on a frequent basis.
  • Must be able to taste, be able to distinguish between and among flavors, spices, and scents as to their appeal and level of intensity for all food and beverage products.
  • Must be able to perform work on a computer in addition to completing paperwork.
  • Requires eye / hand coordination.
  • Exposure to cleaning chemicals.
  • Ability to tolerate various scents, noises, and bright lights.
  • Preference :
