Responsible for the staff and food product within the garde manger kitchen and ensures the highest level of consistency and quality.

Strong organizational and interpersonal skills required. Appropriate licenses, as required. ServSafe® certification, or ability to become certified, required. Knowledge of HACCP standards required.
This position requires a Level 4 Gaming License.
Language Skills
Ability to read, analyze, and interpret documents, such as policy and procedure manuals, maintenance instructions, and other related documents. Ability to write effective reports and memos. Ability to respond to inquiries from employees or guests. Ability to communicate effectively in one-on-one, small group, and large group situations.
Mathematical Skills
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio and percent, and to interpret data from graphs.
Reasoning Ability
Ability to apply common sense reasoning to variety of situations.

ESSENTIAL DUTIES AND RESPONSIBILITIES Include The Following
- Prepares all cold food products for assigned restaurants as prescribed by menus.
- Develops and executes all recipes for all prepared food products.
- Controls quality presentation of all food products.
- Carves ice and other display mediums as assigned.
- Prepares, supplies, and monitors the salad bar in the buffet.
- Assists in staffing, training, evaluating, and coordinating all garde manger employees.
- Ensures specs in all recipes and food apportionment are met.
- Maintains excellent kitchen hygiene conditions at all times.
- Tests and develops new recipes.
- Monitors guest satisfaction.
- Makes recommendations and suggestions in hiring, terminating, suspending, and counseling to the Executive Chef.
- Maintains knowledge of all state health department regulations and ensures all conditions and standards are met.
- Directs the preparation, portioning, and garnishment of all foods.
- Participates in departmental and venue meetings, facilitating the flow of pertinent information from management to employees.
- Assigns production schedules for employees in the garde manger.
- Maintains professional grooming and appearance and acts as a role model according to established grooming and appearance policy.
