Reporting to our Executive Pastry Chef, Nicolas Blanc, as a Pastry Sous Chef within our Pastry Kitchen, you will oversee the day to day activity in our high volume kitchen which caters for our large Events Department, In Room Dining operation, Executive Lounge, Grain Bar and Mode Restaurant, as well as producing the sweet treats required for our guest room amenity program. You will ensure that each dish served is of the highest quality, whilst assisting to control food cost, portion control and wastage.
What you bring:
3 years Pastry experience including leadership responsibilities within a high quality and high volume hotel operation
Passion for elevating your craft with technical skills and knowledge of latest trends in Pastry
Ability to lead a talented team, by communicating clearly and openly to achieve a high trust environment with strong engagement and teamwork.
Exceptional attention to detail and an ability to increase efficiency and productivity
Strong knowledge of food safety standards, stock management, quality control and ordering
The ability to work a rotating roster including weekends and evenings
