We are looking to hire/ PARTNER WITH a highly skilled Head SUSHI Chef to lead the entire restaurant of our 30 year established Japanese Restaurant. The ideal candidate(s) will have, at minimum, 10 years Sushi experience. As the leader you will be responsible for leading everything during prep and service including; receiving, fileting, portioning and prepping all Sushi Bar meats, chicken, fish and produce, establishing prep lists, leading the production of sauces, garnishes, food costing and creating and editing menus etc., ordering food and supplies, ensuring dishes are consistently top quality according to our menu, and in general, leading the team on day-to-day tasks as needed.
Great knife skills and experience preparing consistent high quality dishes in accordance with food health/safety regulations and restaurant standards are a must. You should also be able to customize customers’ orders according to written preferences and food allergy considerations.
You will be the go-to person ensuring the guest have a positive experience. You will be expected to somewhat monitor the dinning room situations and coordinate with the servers and BOH head chef. Together with the BOH Head Chef you will both ensure adhesion to the restaurant standards and health and safety regulations.
You must be able to acquire a Food Managers License within 30 days of hire.
The successful candidate is responsible, conscientious, reliable, punctual, organized, and in general a true professional able to maintain the highest restaurant standards at all times.
Note: must be able to work nights, weekends and holidays. Sundays are required. Schedule can be arranged with the sushi bar staff.
English Required- Japanese a definite plus.
This is a stable and safe work environment free from drama, drugs, and drunks. Most of the staff has been here for over 25 years.
Fujiya Japanese Restaurant DOES NOT have a fast paced, high stress workflow but does require professionalism, accuracy, cleanliness and teamwork.

Salary : $95,000 - $275,000
