Job Overview
A Smokehouse Team Lead assists with achieving departmental production schedules and specified goals. Responsible for efficiently, safely, and correctly cooking, smoking and drying meat products, progressive cooking of meat products and chilling of cooked products.
Duties and Responsibilities
In addition to all Smokehouse operator job duties, primary job duties and responsibilities include:
- Direct Smokehouse team members daily tasks ensuring compliance with safety regulations.
- Assist with daily scheduling of smokehouses and updating due to processing changes
- Creating & updating employee monthly weekend work schedule
- Training of new team members as well as coordinating monthly team trainings
- Daily communication with processing of smokehouse needs, i.e. number of racks to fill ovens, order or product needed
- Daily communication with scheduling and packaging for cooler space, number of bins, daily C and B code inventory, Takedown schedule
- Maintain working order and assist in any need of chemicals throughout the plant
- Assist with creating and/or updating manuals and department procedures
- Proficient with production entries (Sage)

Qualifications
Minimum qualifications required to successfully perform the job include:
- High school diploma or GED equivalent, preferred
- Ability to perform basic math functions, including counting and understanding weights
- Able to understand and follow instructions
- Moderate hand/wrist flexion and gripping pressure
- Ability to stand/walk for 12 hours during shift, required
- Basic computer knowledge
Working Conditions
Required to work in an environment that is wet/damp, dry air and in temperatures varying from hot to cold. Exposure to chemical cleaning agents
Physical Requirements
- Required to stand or walk for long periods, 8 hour shifts, required
- Frequent use of hands for simple and firm grasping
- Frequent lifting, carrying up to 50 pounds
- Push/Pull 1500-pound metal carts on wheels
