The Opportunity:
As the Restaurant Operations Manager you will be responsible for the quality assurance of all finished products of the venue and overseeing the food production, ensuring supervision of all food production specifications and standards are satisfied.
What You Get to Do:
  • Ensure venue operations are run in a smooth, efficient manner to ensure Guest satisfaction and meet standard operating procedures.
  • Ensure all specs in all recipes and food apportionment are met.
  • Responsible for listening to, evaluating, and assuring control of Guest grievances and settling them without delay.
  • Directly supervises Venue Associates.
  • Responsible for the staffing, training, evaluating and coordination of all Restaurant Associates in accordance with Grand Casino & Mille Lacs Corporate Ventures’ policies and procedures.
  • Responsible for the job performance of all Associates, providing feedback to aid the Associates in developing and enhancing skills.
  • Review and approve all recommendations and suggestions to hire, transfer, suspend, promote, discharge, evaluate, assign, and discipline all Associates in a fair and equitable manner.
  • Maximize cost effectiveness within the department by ensuring compliance with established budget, labor and revenue benchmarks.
  • Review financial statements: forecast revenue and labor figures for beverage department; maintain proper inventory control.
  • Responsible for complying with all food and beverage health and safety regulations; as well as all Tribal, Federal, State and local applicable laws.
  • Responsible for liquor control and ordering for venue.
  • Responsible for maintaining all venue equipment as well as the appearance of the venue in accordance with Grand Casino & Mille Lacs Corporate Ventures’ standards.
  • Knowledge of company internal controls, policies and procedures.
  • Participate in the development of new menu items, daily special, and promotions, taking under consideration venue budget, perceived food cost, and guest satisfaction.
  • Responsible for maintaining all kitchen equipment and the appearance of the venue in accordance with Mille Lacs Corporate Ventures’ standards.
  • Responsible for maintaining open communication throughout the venue, through regular Team meetings.
  • Provide input to Resort Manager concerning operational deficiencies and areas in need of attention.
  • Other duties as assigned that related to this role.

What Qualifies You:
  • Six (6) years progressive related Food & Beverage Operations, front of house and back of house, experience to with five (5) years of Supervisory/Managerial experience required and/or an equivalent combination of education and experience, preferably in the hospitality industry with emphasis on Food & Beverage.
  • Two (2) years alcohol service experience with one (1) year of Supervisory experience in a venue that serves alcohol required.
  • Serv-Safe Certification and Alcohol Awareness Certification (CARE) preferred. Certification is required within one (1) year of placement.
  • MN food Handlers License – required with in first three (3) months of placement.
  • Must be able to secure license from Gaming Regulatory Authority (GRA).
  • Responsible for following all relevant Detailed Gaming Regulations (DGR’s).
  • Mille Lacs Band Member and American Indian preference will be exercised in the hiring process.

Physical Needs:
  • Talk and hear; ability to communicate effectively.
  • See and adjust focus to include close, distance, depth, and peripheral vision.
  • Stand, walk, run, sit, (up to 8 hours) balance, stoop, kneel, climb, crouch, and/or crawl.
  • Handle objects, tools, and controls; reach with arms and hands.
  • Be able to lift and carry objects up to twenty-five (25) lbs.

Work Environment:
While performing the duties of this job, the Associate is regularly exposed to:
  • A low-to-moderate noise level (offices).
  • A moderate-to-loud noise level (operations areas).
  • Moving mechanical and/or electrical components.
  • Chemical solutions such as cleaning, and polishing compounds.
